Looks good!! Instead of pan seering, If you bake it uncovered with a little butter on top it comes out crispy too! Less work!
My Grandma makes it that way and butter and she adds a little bit of nutmeg and soy sauce

Facts
I marinade chicken in the morning and take it out an hour before I cook it. I add the salt 30 minutes before I cook it. I want those flavors to really flavor the chicken. I use sage, garlic powder, thyme, paprika, small amount of clove. (Everybody has their own favorite combo). Thighs are the best cut.

Thank you for making this nice video. It's very good! I liked it because I am a gourmet cook and always use the "two-step" method for cooking meats. This method starts with searing on the stovetop and finishes in the oven. Because I seek to develop contrast, that is crispy on the outside soft/juicy on the inside. This is Mouthfeel, how it feels in your mouth. I always seek to develop this mouthfeel, this contrast every time I cook. For example, sweet & sour, crispy and soft,. For chicken I pre-heat my oven to 450 degrees F for half an hour. When I transfer the chicken to the oven I do not cover with any foil because I want a very crisp crust. At this temp it's usually around 25 minutes for the first temp check then cook until the center temp is 173 degrees F. .

Thank you for making this video. The chicken looks delicious! I have some of the same questions as a few others who took the time to post. When did you remove the foil from yr chicken? Was it after the 20-25 minutes and then you looked the chicken longer or was it 15 minutes after you put it in the oven and then cooked it another 10 min w/o the foil??? Also please answer what was the oven temperature, 350, 325, 400? What was it? Thanks again for the video. I’ll be checking back for your reply.😊

Do you put them in the fridge for a reason? I always thought the closer to room temp chicken is, the more evenly it cooks. Looks delish!
It does let it marinade to room temperature also sprinkle a Lil rosemary along with the thyme you don't have to sear the chicken simply place in preparation heated oven. Cook now for last 5mins set oven on broil high and that gives it more of a look as seared

Girl, I made this today........I forgot to put in the He rbs deProvence and I didn't add salt because the Creole seasoning I use (Tony Chacere's) already has plenty of salt in it. I seared it in minimum oil and baked it with the foil on at 375 for 30 minutes........Delicious!! Full of flavor!. You must have had your baby by now. Was it a girl or boy and what is the name? Thank you for this. I will definitely make it again.
