Hello, lucuma is a superfood powder and does not work like an emulsifier. Sunflower lecithin is a health supplement and very nutritious. You can get it on Amazon. It's the choline in sunflower lecithin that has the emulsifying properties. And choline is very good for the liver. Let me know if you need anything else.

Hello, You could definitely try! Tigernuts are grainy in texture so they would not be smooth like they would with cashews. I would alternatively use sunflower seeds for a vegan mayo. Sunflower seeds are smooth and creamy as well.
