99 yr old Marietta makes tagliatelle with vegetable sauce | Pasta Grannies

- 99 year old Marietta is still going strong - we first met her in Calabria 18 months ago - and we caught up with her in Rome. This is one of her regular pasta dishes which everyone can adapt and make their own. Stew onion, carrot and celery before adding about 500g of greens like chard, cabbage, dandelion, kale and so on. Add a fresh red chilli if you like. Pour over some tomato passata, season with salt and leave to simmer for 20 minutes.
For her pasta, Marietta uses semola rimacinata/durum wheat flour and water. Allow 300g flour, and 145g of water with a pinch of salt. - Фільми й анімація
Absolutely amazing! To live to that age and still remember everything and be able to still be productive, what a gift to her family!

My nana passed away just a month ago. Whilst she never cooked pasta, her and I baked endless cakes in the past. Seeing these wonderful women still so lively with their love of cooking is just the best. Brings a smile to my face every video I watch with all the memories.

Nice fresh seasonal dish. I'm always amazed that some of the Nonnas manage to cut their veg so finely with such blunt knives. Like the look of the pasta too, seems like it'd have good mouthfeel.
Make no mistake, those knives aren't blunt. They have a finely serrated edge that's very sharp. The amazing thing is that they're dirt cheap but still made in Italy.

@@elisaastorino2881 Maybe some are sharp, but I've seen some of them that look awful blunt.
Maybe its from personal experience I found that a lot of their British equivalents were as sharp as a rolling pin. I remember sharpening the knives my mother used years back. When I returned the next week she'd deliberately blunted them again as she thought they were dangerous when sharp! Blunt ones are way more dangerous in my mind.

Every time I see a grannies using a table knife, I wonder at the history of kitchen knives in Italy. I feel sure they sharpened it somehow and wonder how it transpired that it's a favorite. I did note her larger knife for the pasta.

That little gesture at 1:48 where they gave her a coffee hit me by surprise. It showed me a little glimpse of her life. This woman is respected and she feels that. They protect and love her and deeply care for her. She must feel safe and surrounded by her family most of the time. These things are so important for a long and happy life. Unfortunately in my family and my culture elders are not respected and protected this much.

Thank you so much for posting this in You Tube! I happened by chance to see this episode on German TV today, and searched You Tube in the hope of finding this. What a blessing this dear Marietta is! A hard and simple life, but full of joy for life and a heart full of peace , contentment and a wonderful sense of humour. This just radiates from this dear lady. By the way, I enjoyed the simple recipe. This is much more than "just another" cooking program. Excellent! I have just started making my own pasta, confessedly cheating a bit by using the wonderful Atlas 150 maschine from Marcato. It is such fun, the fresh pasta tastes a million times better than shop bought dried pasta. My great grandfather came originally from Picinisco in southern Italy. I feel like coming home when watching this! Thank you so much! I have immediately subscribed ❤❤❤
