In the 5 Roll Refiner, which way does the chocolate mass move, upward or downward. Thanks

It moves upwards and behind it there is knife that scrapes the product off the roll.

@@ardehel Thanks. So you place the mass at the 2 bottom rolls and is scraped off from top roll at the back.
