Gordon Ramsey is not the god of cooking. He is though an extremely talented chef, but, his specialty is fine dining cuisine. Short order cooks have a whole different set of standards they have to go by, the main one's being consistency and time. While Mr. Ramsey I am sure is pressured to offer consistency, I doubt people paying $100+ a plate are worried about their food being out in 5-15 minutes. Doesn't sound too hard, but get a rack full of tickets and a grill full of food with more tickets in the basket, and the minute or two quicker it cooks by pressing makes all the difference. The amount of moister lost is minimal, as people came to eat burgers and steak sandwiches not sip cups of beef juice. While this guy doesn't look all too busy, it is probably more of a habit from a busy working atmosphere. Also, they may have asked for their meat well, which is not as uncommon as one would think.
i disagree. the juice in the burger makes it feel unenjoyable for me. such gordon has a lot of experience in cooking, but there are some people who do not like what he makes.
