It depends on the room temperature. I left it out at room temperature of 74 F, at 2 hrs there were no sign of breakdown yet before we ate them. I'm not sure exactly how long they hold their shape outside as we consumed it within 2 hrs.
I haven't tried jelly but it should work I just don't know the ratio but check this article about gelatin and agar/jelly it says 8 tsp gelatin = 1 tsp agar/ jelly. www.masterclass.com/articles/agar-vs-gelatin

Can you make without agar agar and gelatin? But with cornstarch
I haven't tried using cornstarch doing this so I don't know if it works and if it will come out the same.
