    I am French and I hate cold chocolate croissants we call chocolate bread. I always ask to warm it a few seconds in the microwave at the bakery or I wait to be at home to do it myself.

    The reason hand chopped chocolate comes out better, is because the chips are dusted in some form of powder that keeps them as separate chips, making them not as cohesive when used like that in baking

      The chocolate might have a mild bloom, which doesn’t affect it at all, but it doesn’t have starch or anything.

      This could be true, it’s definitely true with preshredded cheeses, they put powder in the bags to prevent it from sticking together.

    Omg!!!! This took me back to when I was a child and my mom would bribe me with a chocolate croissant before taking me shopping for about 12 hours. The chocolate croissant made everything worthwhile. Thank you for this recipe. Now I have a new tradition for my daughter and myself.

    Make the Argentinian version... with Dulce de Leche... there are tons of types of "Croissants" and stuff like that here that... its huge! you enter a Panaderia in Argentina and you better excercise very often, have a lot of money and a ton of self-control...

    I have been so ultimately crabby all day about everything from money to work to friends, and wanted a quick turn-around to my mood. Seriously, 6 minutes about chocolate croissants that I'll probably never make (and yes, will probably buy at Starbucks) for whatever reason was such a great escape... I don't think there is anything on all of Netflix could have such a strong effect. Thank you chef John!!!!

    Yes, that amount of choc is PERFECT. It’s like the best thing about choc croissants- that little bit of bittersweet chocolate. Also I love that you sprinkled with sea salt- i love sprinkling cookies with it but would never have thought to do it on a croissant!...Shout out to your Chilewich placemat.

    Blasphemy!
    Warm (fresh) pain au chocolate is heavenly. It is simply impossible and illogical that you somehow make it better by waiting for it to get old and cold.

      That's a little harsh. I'm in France. Where I shop, they're made fresh every morning, but I don't like the lines, so I get mine cold. I find that 15 seconds in the microwave restores their warmth and softens the chocolate.

      Yes, but he says specifically you must wait for it to be cold so that the chocolate re-solidifies. You, like most I assume, like it best warm. I also had mine fresh from the bakery when I lived in France and when I visit Germany. It was my favorite simple pleasure; a breakfast of warm, fresh bread and coffee of actual quality. Also, I am not harsh. Just hyperbolic with dry humor. ;)

    Irregular polyhedron is probably close enough for the shape you were going for there. Technically that would require straight edges, but we'll just assume we are infinitely dividing any curves as needed, because I'm too lazy to go look up a formal name for a shape combining straights and curves.

      Interestingly I tried to look up the formal name for a shape combining both straight edges and curves, and couldn't find much of anything definitive... Squircle, or superellipse came up, but they seem to have very concrete definitions of their curves and edges, and wouldn't define such an irregular shape. Perhaps it doesn't come up in maths or physics because each portion would be calculated separately as a segment of the whole?
      I like the sound of Complex Compound Irregular Polyhedron with an Infinitely Subdividing Fractal Surface, if for no other reason than it technically means my croissants are endless and I can continue to eat them forever :)

    I couldn't have been happier to pull these out of the oven, even if the tips had pulled back from their tucks despite my best efforts. My inner fat kid pulled a coup d'etat and I waited a whole 12 minutes before eating one. Luckily there are more to eat properly later. My house smells amazing and my tummy is happy. I don't know what it is about croissants, my gluten sensitivity has nothing to say about these. I waited so long to make these because I was intimidated by the process, but I am now aware of the input to value ratio. It's a no-brainer. MAKE THEMMMM.

    My favourite pastry. Trying not to eat a couple with a cup of coffee every morning can be a struggle. I switch to Pain au Raisin from time to time to keep my diet in check.
    And yes, eat them warm. Like croissants.
