A little known fact about beets. They have a specific chemical that makes them taste muddy to many people, but the amount of that chemical varies exponentially by variety. Unfortunately, most grocery store beets are varieties with the most muddy flavor...by a lot! I hated beets until i found a book called "grow for flavor" which is in my top 5 gardening books list. He has a chart of beet varieties according to the amount of this chemical in each. Once i started growing the low chem varieties, it was a game changer. I now LOVE beets..but only those i grow myself..which is incredibly easy by the way. Since we are on beets, there are also varieties grown just for greens, which are among my favorites and if stored properly over the winter, they will continue to produce greens until spring. My favorite is lutz green leaf. Hope thats helpful!

@maramcmanus It’s funny you should say that about beets. As a child I hated them because I thought they tasted like dirt. I now by grocery store brands and roast them. The roasting sweetens the vegetable to almost like candy and I find the very tasty.
I do grow my own beets, but never looked into the chemical you spoke of. I love tops so much, that I use the root to continue leaf production rather than dig the beet itself. Good information Mara, appreciate it.
On another note, beets are fantastic for the stuff we need to create NO2 (nitric oxide). People older than forty need to supplement in order to maintain good blood pressure. Beets are an excellent source.
I am going to get on the mailing list to get the beet latte recipe. Thanks for the great idea Vanessa!

We spent Valentine’s Day cooking a homemade meal together. It’s a total date night. We laugh, tell stories ( we’ve been friends for over 40 years & married 37 yrs). Our tradition is to bake cookies and make candies for our loved ones then deliver them the day before Valentine’s Day, so we can relax and enjoy each others company without the hassle of going out, spending money on things we don’t really need and possibly ruining the day.

Oh my goodness! I just had to tell you that I downloaded the flipp app and I was just browsing through and noticed that TSC had the trailer hitch my husband has been looking for on sale for $100 off. Well I clicked on it and the price actually came up $185 off! Wow! You just saved us $185! Thank you so much!

In Nigella Lawson's first series Nigella Bites, she did an episode of fast food with the salmon (hers was with bacon) and mushy peas (petit pois whizzed up with sour cream and butter) and it has been a standard in my repertoire ever since- like Cassandra said, it's super fast and convenient and so satisfying! I have a butternut squash hanging about on my counter so I may make something like that casserole- it looks good for this raw Spring weather we're having!
