    On the subject or ramen, it is about the broth, the noodles, and the garnishes. It should be balanced and hearty. When it is cold outside, a good bowl or ramen is perfect to warm you up. #IncreaseThePeace

    Kyu near union has awesome Ramen in 6 different styles including dipping hot stone Ramen and it's super affordable for such a high end restaurant

    I too went on a ramen mission and by far Kenzo Ramen, IMHO, in Mississauga (everything made by hand daily) followed by Isshin Ramen, then Santuoka are tops. I'm sure nothing compares to what Japan can offer but all things considered in what I consider to be one of the best food capitals of the world these would be my top choices.

    I recently found your ramen videos and they are very good. Don't forget to sip the soup first when the bowl arrives! It's is an unwritten rule :)

    Those bamboo shoots are Menma right? That's not just plain bamboo shoots (takenoko), these are fermented and seasoned so they taste totally different and have different texture.

    This feels like that south park episode where the character butters comes up with a plan only to find the show the Simpsons did it first. In this case busker is butters and Alex from French guy cooking did a video series on ramen. Ah well I like busker so lets see what he brings to the table lol.

    Toronto: Top cuisines? Where to begin??? I would say Japanese, Chinese, Korean, Polish, Chinese, Portuguese, Indian, Persian, Turkish, Mexican, Italian, French, Hungarian,Jewish favourites, German, Finnish, Belgian, English, Spanish and yes, Canadian - but that is a melange of many cuisines including Native American and so many others. We are very lucky. Welcome to all!, enjoy!

    For some reason many Torontonians love Kinton Ramen and Sansotei Ramen. Those are my LEAST favourite places for ramen...they chinz out on toppings (particularly, Sansotei Ramen) and I just found them bad-to-mediocre quality. To me, they taste more like take-out ramen. My favourite was Jyuban Ramen House, but unfortunately they closed down. They made their own hand-pulled noodles fresh everyday and their own soup. Their soup was light and tasted homemade and not overly salty like most restaurants. Their portion size was pretty generous too. It was a shame to see them disappear. I guess it was difficult for a small business to compete with the big chains. It was a hidden gem! My current go-to is Ajisen Ramen...they’re decent at an affordable price, but I’m looking for something better. I’ve yet to find my new favourite. I’ve heard that Konjiki Ramen has Michelin’s cheap-eats ranking, but I’ve yet to try it. I also heard that Ryus Noodle Bar is good too. I like the tsukemen (ramen with dipping broth) at Kiu Japanese Restaurant, I wish more places would sell tsukemen. 🍜 Toronto has some of the best Chinese & Taiwanese food (from different regions) in North America...both savoury and sweet, and from cheap eats to high end eats. You should come back to check it out! We have tons of options!

    Hey John! I consider myself a ramen addict and in my and a few others opinions a good ramen consists of five key components: broth, tare (sauce), noodles, toppings, and oil. Apart from that I personally believe ramen to be a completely customizable dish that can be made as long as you have those key components. Just don't forget to use ramen noodles which have kansui or alkaline water, which gives the noodles the chew you expect from ramen.       the pork one, tonkotsu, is milky because they boil it hard to emulsify the gelatin that is taken from the collagen in the pork bones.

    You didn't even check out Konjiki. And Ryu's been expensively disappointing since the move. The only redeeming place is Sansotei and even their ramen isn't the best.

    good ramen stock can take 8-12 hours to get the deepest flavour out of, you generally cook it a day ahead if you want to make this tonkotsu ramen

    Great video, Chef! I've been a follower for ages and since I got to Canada in April for working holidays, I've been working on the line in restaurants in Vancouver, Tofino (at Shelter) and now Banff.
