Yo, I've been learning how to use my Shapeoko too, I can't fix the software but here's some stuff you can try:
Check out the USB cable, it's really susceptible to noise. I had mine do some random stuff until I got rf shielded USB and Spindle cables. Also, it does some weird stuff if your computer goes to sleep, so you might wanna change your power settings. Also also, a few things that have happened to me when it randomly cuts super deep: the spindle or the bit isn't tight enough and slowly drops down while it's cutting, the depth of cut is set waaay too high in Fusion, or I didn't set the z axis properly before cutting.

BTW, you should try some 3d stuff instead of treating it like a shitty laser cutter.

Yeah, have had my own CNC cutter slip the bit twice, didn't tighten it enough. Also he did kind of tried some 3D stuff, he milled the cat in the pumpkin.

Some people just like using chopsticks, i am one of these people. For everything from popcorn, steak, to mashed potatoes. Same idea with using a fork rather than spoon for mashed potatoes, all preference.
