Haven't watched the entire video yet, but my family loves Okinawa soba. It helps having an Okinawan wife, but I think the central feature for great Okinawan soba is the broth mostly from the pork belly part. The pork belly takes a few days to make properly. The soba noodles we usually buy at a Japanese supermarket and they are made in Hawaii. Anyway, one of Okinawa's great foods (next is deep-fried gurukun)
