    If the beer is sweet after fermentation, then it means it hasn't fully fermented. Basically, there are sugars that have not converted to alcohol. Was you cellar too cold for the yeast in use? Some yeasts just aren't real strong too, so that could be it also. As alcohol levels increase it can kill the yeast, so the yeast have to be tolerant of it and strong enough to survive. Things like the date the yeast was manufactured, temperatures, etc can make a difference. In hombrewing, many (myself included) create yeast starters to propagate/multiply the yeast population prior to brew day. This creates young, vibrant, healthy yeast that tear through wort. Also, it's excellent that you tasted it prior to finishing. You should taste everything you put into it (maybe not the yeast) and see how it tastes all along the process. Congrats on a successful brew for your first homebrew! This is the tip of the iceberg!

    My wife just bought this for me. It came with the Golden Ale extract so fingers crossed. I much rather stick with making Blue Berry wine but here we are.
