    When it's too hot to eat I love to take my assorted squashes, red onions, carrots, and rough grate them into a bowl and toss with Redwine vinegrette and eat as a cold snack. It's so refreshing. My husband loved it this way. I lost him in January 2022. 😔 he loved my gardens. I loved watching your video.

    Oh my goodness gracious! I'm a southern, Alabama country girl, born & bred and squash 'n onions was something me and my 4 siblings were raised on! Our Mama cooked it in a big cast iron skillet until it was beginning to get soft, then she'd add a little extra butter and let the cast iron do its magic by caramelizing them without scorching or burning. It's how I cooked it for my own kids and still do! And what goes on the plate beside it? A sliced home grown 'mater!

      Thank you so much for watching! We cook up a mess and freeze it in one quart freezer bags. It is not as good as fresh cooked but tastes pretty good in January and February. Just a good way to put up squash. Anyway, thanks again for watching, have a blessed day ❤️❤️🐶

    Variation on your recipe I found and enjoy - Italian style: Cut squash and onions in skillet with butter or olive oil just like you did. Add a little zucchini also for color - does not taste any different than yellow squash in this recipe. Dash of oregano/not too much. Some salt/pepper. Then do not cover any, but cook on med-high, frequently but not constantly stirring, until just starting to brown a little. Have quartered fresh tomato ready to add at end; heat barely enough to warm. Very beautiful and tasty, with enough firmness in the veggies to be good but not under-cooked. Squash can be cooked longer before adding tomato if you especially like it soft. Can use iron skillet, but use lower heat or it will burn.
    Hope other viewers share good squash recipes too - if the squash bugs don't get them, they are very prolific and it's good to have variety! I also like squash raw, with fancy crinkle cuts or uniform slices on a veggie tray with ranch dip. Doesn't get simpler than that and no fresh garden nutrition lost. Your sparkler white radishes would be very pretty and delicious on that tray too! Thank you for video and can't wait for more! Hope you're enjoying Florida!

    My mom sautéed yellow squash, zucchini, onions and potatoes. She layered it with salt and pepper dotted with butter! So good and a recipe I make for my family! Love your channel and all you both do and share!

    Love that cleaning station, Nancy! Showed my husband tonight and told him I wanted him to make me one. Have you thought about dehydrating some of your extra to use through winter? It's nice when you want some a little firmer and not real soft. I love using it in stir fry, and Italian dishes as well as soups. I also like to cut them lengthwise into slices and use them in place of pasta for a lasagna. 😊 Like you, I prefer the zucchini. I have also planted yellow zucchini, and zucchini fritters are my family's favorite. Thanks again guys for the videos!!

      Hollis & Nancy's Homestead I watched the video because I’m starting my own garden, I initially thought this variety was going to grow like a vine until I watched your video. I had to move the squash to a larger area with room to grow. And now once they start producing they will have plenty of room to stretch, Your video has saved me a headache down the road. Thank you!

    Growing up my Dad had a pretty good size garden, and since I’ve been out of my parents house I’ve always wanted to try and start one. I figured I’d give it a go this year and try a few raised beds. I asked my dad for some tips and he gave me a few but he also pointed me in your direction. Boy am I glad he did, you’ve gotten me even more excited to try it out this year. You ought to do a “10 tips” or “15 tips” for beginners, like myself, that covers most aspects you can cover if you haven’t already.

    I've got Spring fever something bad. Stumbled on your videos researching raised garden beds. Binged at least 2 hours straight. Lol My dad loved fried squash. I was taught to slice it thin, dip it in some scrambled eggs and then toss it in to a mixture of flour, salt, pepper, and a little paprika. Then fry it in oil until Golden brown. So yummy

      Helen Hoverson My brother in law showed me how to make this, he also puts sliced zucchini in there too. We're both doing gardens this year, first time for my wife and I, and crook neck squash and zucchini are coming along pretty good....

      Cut that zucchini in half the long way..scoop out the seeds. make up some spanish rice with hamburger and stuff the "zucchini boats". Toothpick the two halves back together. Bake in the oven in a pan with about an inch of water in it. I would bake at about 375° until the zucchini is tender when you poke it with a fork.
      When it's done...slice into about 1 1/2" slices. Serve the slices on a plate with a dollop of sour cream. Mmmm good.

    WE SLICE THEM, ADD SEASONG, DIP IN EGG THEN ITALIAN AND PANKO BREAK CRUMBS. PUT IN HOT OIL AND FRY. LET THEM SIT AND A SPINKLE PARMASAN CHEESE AND DIP IN RANCH DRESSING. VERY DELICIOUS AS SNACK OR APPETIZER.

    I grew up eating nothing but fresh garden/farm raised vegetables and yellow squash was one of my favorites. I just harvested my first round of yellow squash and cucumbers yesterday. We like steamed squash and boiled squash. But my favorite way to cook squash is almost the same way you did in the video except we always add 2 or 3 strips of thin sliced bacon cut up in small pieces and about a tablespoon of sugar and we let it cook down a little more, closer to a caramelized state. That is one of my favorite dishes. The only dish I know of that is better is Okra and Tomatoes. Those two dishes are probably the main reason I go to the trouble to raise a garden. Although I truly love the taste of all the other fresh out of the garden vegetables.

    Ya'll are good people and I really love the videos. I put in 8 yellow squash and 8 zucchini plants in this year with 3 planted to a hill. Needless to say I'm gonna be giving away lots, putting up lots more and maybe even having my daughters sell some on the side of the road. I love squash and zucchini with potatoes baked in the oven together and then sprinkled with cheese!

      Jason Leer no flowers yet, they just started putting on leaves. I direct sow'd them and it seems like they're taking forever! Good luck with your garden:)

    Going to try your cooking method. For some reason I remember in the south they added a little water and cornmeal. My favorite way to cook summer squash: Slice into rounds. Slice a sweet onion then cut the slices in half. Put in a large bowl. Drizzle with olive oil. Add a good bit of Parmesan cheese and a little black pepper. Toss well. Lay in a single layer on a large cookie sheet. Roast at 425 until tender and lightly browned, turning halfway through the cooking. Perfect!

    Great harvest! 2:50 "don't plant too many", heh. I lack confidence mine will be as productive. I will have to freeze some if they are. Last year I made my first feeble attempt at vegetable gardening after an absence of over three decades. But I got a late start on the season. This year I got started in February.
