Both her cookbook and the show are about not only great recipes but also solid cooking techniques and instruction on how to build flavor. This video will teach you how to get to the heart of the artichoke, some tips on how to cook such a fibrous vegetable, a simple recipe for a finishing vinaigrette, and some tricks for grilling indoors. If disposing of so much of the artichoke before getting to the heart bothers you, you can of course make traditional boiled artichokes, which makes the undersides of the leaves deliciously edible (you get to enjoy the hearts, too) or Roman-Jewish fried artichokes. For the latter, you DO have to remove most of the leaves, but not as much as for Samin's dish.

I can't stop watching you, lol! Anyways, I'm not a fan of artichokes, but I learned so much! For instance, your kitchen tricks to not only season vegetables from within, but to expedite their grilling process (hence, the grilling taste) Thanks again, Samin!

I love her so much! I'm so going to make this...with frozen artichoke hearts...I"m not going to do all that peeling. Hopefully it goes good in a compost.
