the amount of respect i have for this woman is crazy
I know, right? She's an excellent teacher. I love how she explains the reasoning behind what she's doing, but instead of coming off as "lecturey" (lecture-ish?), she's so entertaining to watch. I also love how passionate she is about her craft.
The amount of contempt I have for you is amazing. With proper marketing anything can be sold to you. Even kitchen confidentials.
Yeah, me too. I wannabe her best buddy so hard.
@@delirium129 the other professionnel cooks are annoying when they preach about the right way to do something. Instead of how when we handle ingredients this way we get this taste or texture.
@@Dosadniste2000 Another bitchy millennial?
My only complaint about "Salt Fat Acid Heat" is that there's no comment section on Netflix for me to say how much I enjoyed the series. Would love a follow-up season or related series with Samin Nosrat.
Tom Haflinger Netflix did that when they first started
@@damien1781 (steps forward, leans unsteadily against rustic cane) I remember those days!
Tom Haflinger lmao 😂 😂😂😂
GotYOUrBitchASS Wattz | they had to stop doing comments and reviews, because they’re trying to get views and people bashing their shows is not helping.
Eleonore Bon I figured but I did like reading those comments...most people forgot they started that way.
Her Salt, Fat, Acid, Heat Series on Netflix is a must watch. They did a great job.
What sort of things do they show
@@JPzizou it's a documentary-style travel food show, it's pretty good from what i saw in the trailer.
No F..ing I’m watching it now. Thank you for the Heads up.
Yesss! My fave food doc by far!!
Chefs Table too is good. Worth a peep. Season 1 Ep. 2 and Season 2 Ep. 1 are homeruns
Samin is truly this generation’s Julia Child and she’s the absolute love of my life
haha, boot licker idolater
@@Dosadniste2000 well you are right truly idolising a homo sapiens is quite silly, but what's your point
Her show needs more episodes. Her genuine love for food was refreshing
I just love Samin's personality. What a dream it would be to cook with her ❤
Exactly, count me in.
All aboard!
How to prepare an artichoke:
1. remove the choke
2. remove the arti
3. eat the air that was once inside
4. celebrate loss of 30 Covid pounds
:D
How on earth did people even figure out that these were edible!?

Oh my gosh I got so excited when I saw Samin in the thumbnail. Salt, Fat, Acid, Heat was AMAZING. I really hope she does more. I think it is so soothing to listen to her talk and watch her at her craft!
Her happiness and passion is so contagious! I am so glad she is getting the spotlight she deserves.
prepaid comment , marketing
I LOVE HER!!! Cooking is in her soul!!!!
3:45 she just stuck her finger in a pot of boiling water to test salinity.... I'm shook
Eric no pain no gain
yeah man professional cooks have asbestos hands
Just the tip...
@@jacksadler8090 I've always found that phrase to be so strange. Like, I get it, it's a very heat-proof material. But we're also leveraging imagery of the person preparing our food having hands made of a famously toxic substance.
Shaken*
I throughly love how she cooks..she make love cooking all over again.❤
She really has cooking down to a fine art...
ichoke.
I would protect Samin Nosrat with my life
love her just finally started watching the netflix show....so amazing!
She's brilliant and so genuine! That show is so phenomenal and inspiring.
Me too.
Awww...
and this is why US is doomed with it's idolatry of TV marketed personas
I love watching recipes like this. I'll probably never grill artichokes, but now I know what the term "macerate" actually means and a few other little tidbits!
She is really natural behind the camera, and super informative without being boring. Really nice! I might just buy that cookbook...

Samin seems like such a fantastic person and teacher. And her laugh is so infectious!
She did a great job on her Netflix show.
I love the way samin teaches and cooks cause it’s what makes sense! The tricks about salting the water, letting garlic/onions sit in the lemon juice for a bit before putting in the oil...it’s the old school logical tricks my grandmother taught me that makes my cooking great!
I love how she incorporated salt, fat, acid and heat in this. Teaching and marketing I love it 🥰
Tried this today! For the dressing, I exchanged the vinegar for another acid; lemon. Absolutely beautiful! Thank you
she seems like a wonderful person, and talented chef
This looks like an awesome artichoke recipe. Will have to try it this summer because I always end up with so many artichokes in my garden I give more than half away
Love the way she has so much fun cooking. . . She is obviuosly a great cook but she never gets overpowered by the details of the recipe. She just loves what she is doing and it shows. I have a feeling that if she totally trashed dinner everybody would still love it just because she would be so darn entertaining.
She has one of the all-time great laughs. Totally infectious.
You can compost all of that excess from artichokes! Would love to see more of that touched on throughout these videos
I think Samin Nosrat might now be my new favorite person
she's ugly and tacky enough so that you don't feel threatened
She inspires me! Her joy and passion for cooking is amazing. I can only aspire to be half the chef she is one day :-)
she's ugly
@@Dosadniste2000 Leave it to some internet basement virgin to judge a successful and innovative chef. Check your jealousy when someone's sharing inspired feelings from a powerful person.
@@ianjackson7916 Since when power comes from lowering yourself in demeanor to come to level of her audience, who are the bottom of the barrel ? Hilarious.
@@ianjackson7916 How can one be jealous at ugly fat woman that tries to appeal to low-class? ahaha
What a lovely woman cooking what she loves!
She is great at explaining things
As a chef myself I can see how passionate she is about food and how she understands the cooking process, I loved how she said that you don't always have to follow a recipe to a T and to trust your instinct, this something that makes a good cook for sure!
took me a while to realize 'it would take 350 years to grill them from raw' was hyberbole and not like.. a fun informative fact lmao
I love watching Samin. Her personality is so loveable and so talented!
She is soooo engaging ... Would love to watch her more
Watch her show on Netflix it's great
She’s so likable and such a great teacher
Huge respect to her
"I'm smelling burning, which probably means we're good" -Samin, 2019
She is such a treat to watch! Her book is incredible.
Chokes or “shoke” is literally thorns in arabic
I love Samin. She loves food and has such a sense of fun. She is a natural on camera too so I hope that we get more videos from her. I watch “salt, fat, acid, heat” regularly, and would love to watch more.
She's great! I could watch her cook all day.
We need more of her, everywhere! More please! She makes cooking seem effortless, and her recipes have so much mmmmmm factor.
What an awesome teacher -- I love how she takes the time to explain thought processes behind the decisions she makes. Love it.
I love her happy attitude, wish I would be that positive haha
I LOVE this lady! The cooking world has needed her for a long time.
Her show was beautiful and honestly inspiring. If you’re a foodie it’s a must watch! Especially the salt and olive oil episodes :)
that looks so good. Not only would I eat this whole thing for dinner. I would want three more plates like it.
You have the BEST personality of anyone in the food industry. I can't get enough! Thank you for making my day every time I see something of yours! I LOVED Salt Fat Acid Heat and I saw you make the most beautiful salad I have ever seen with Jimmy Nardleo peppers. Maybe on M. Pollan??? You are FANTASTIC!!!
She got chops. Mad respect.
Watched the Netflix documentary on her travels with salt, fat, acid, heat
Very impressed with her command of Italian while she was in Genova
Sampling Ligurian cuisine. For an American born Iranian she has
Certainly made her mark in the celeb chef world. Wonder what other languages
She has mastered. FRENCH, perhaps?? Congrats
I named my cat Samine after this woman. She’s such a lovely person and she has such a beautiful name!
What an informative woman! She's down to earth, very talented, and makes difficult cooking look easy! I'm going to call her "The Mom of Cuisine"!
I get boatloads of artichokes each year and she's right. All that stuff she peels and chops off is totally inedible. This looks like a great timesaver at the table. Sticking her finger in boiling water and hand (HAND!) tossing HOT HOT HOT vegetables? What is this woman's super power?
I love her energy so much!
Samin is the best! So knowledge and fun! Wonderful lady!
Samin is an absolute goddess. She’s brilliant, she’s personable, and she’s crazy talented. I will watch anything she’s in.
She's a legend
Omg I love her laugh and her joie de vivre is contagious! Bring her back for more episodes pleease! ❤💖❤
when I was little my mom fed me steamed artichokes with dip and it was a ritual to peel off the leaves one by one and nibble on the bit of meat at the base end, until reaching the “goblet” part. to me THIS seems like a tremendous waste of good food hahaha but also a delicious recipe!
she's a gift to the culinary world. Keep up the awesome work Ms. Nosrat!
Funny !!!
She has legit food knowledge and the skills to back it up. Respect.
More Samin! I love how she shares her process so delightfully. Wonderful on Netflix too!
She should have her own PBS cooking show!
In Vietnamese culture, we have artichoke tea made from taking the water you used to boil / steam artichokes in and adding rock sugar. Pretty sure you could do that with all the leaves and add a use before you toss them.
It’s called Artichoke coz it’s taken from the Arabic equivalent Ardi Shawki أرضي شوكي
Shawki means full of thorns referring to the harsh peaks of the vegetable (leaves) that might hurt or cut your fingers when touching them :)
You are honest to God a blessed human being and I'm so grateful you do what you do.
My Step Grand Mother, used to grow artichokes, and make Jerusalem Artichokes, a pickled condiment.
Samin is great inspiration. She would make a great friend!
That looks so beautiful. My laziness prevents me from working that hard to get an artichoke prepared for grilling but I will definitely find a restaurant that serves them! Thank you so much for the idea 😊!
I love how genuinely innocent and dorky she is 😋
the leaves with some butter yummm but the heart is where it truly is at
We eat the whole thing and dip the leaves in a white sauce. The bottoms are considered a delicacy.
She is absolutely awesome and actually teach you how to cook!
She looks genuinely funny and someone who truly appreciates food in every form. I want to meet her!
By the way, artichokes are my favorite vegetables. So delicious, they are worth all the mess just to get rid of the spikes.
Salt Fat Acid Heat was absolutely phenomenal
Samin is a natural presenter. Also cool as hell and did good work over on netflix. We should see more of here
Please, please more of Samin! I love her!
If disposing of so much of the artichoke before getting to the heart bothers you, you can of course make traditional boiled artichokes, which makes the undersides of the leaves deliciously edible (you get to enjoy the hearts, too) or Roman-Jewish fried artichokes. For the latter, you DO have to remove most of the leaves, but not as much as for Samin's dish.
She’s the sweetest and her show was so good
She's a doll and, obviously, skilled!
Why there is no more of Samin on here? I have to keep rewatching like 5 videos on UA-cam (not including Netflix) featuring her great skills and fabulous sense of humor.
Loved her Netflix show Salt, Fat, Acid, Heat. Made me hungry tho😂
I love this woman. Awesome host on Salt, Fat, Acid, Heat!
Noooo don’t throw them leaves, boil them and have them with a little bit of vinegar and olive oil as dipping sauce
Came here to say this. Artichokes are so expensive, to throw so much of it away... those leaves steam up great, eat the tips with dip of your choice (drawn butter + brown mustard!).
@@SeventhEve What is "drawn" butter
Auggh. You are throwing away the leaves which when dipped in mayo and the flesh scraped off by your teeth is edible, and delicious . If you don't know the basics of an artichoke, you shouldn't be making videos about them. Lost all my respect for your expertise in the kitchen. Plus being so irritated at your obvious lack of knowledge.
@@laurapruitt7156 I thought I was the only one who was irritated by Samin. To be fair, you only criticized her wastefulness, but I just don’t understand the love affair with her. She may be telegenic, but her culinary skills are lacking if she thinks throwing away 3/4 of the artichoke is a good plan. I watch cooking shows to improve my kitchen skills, not because I want to be entertained by a charismatic person.
Love you, happy to see you on you tube. You need a cooking show
Artichokes intimidate me, but this recipe seems simple enough to give it a go. I am a huge Samin Nosrat fan, so anything she's about, Im sure I'll love.
I just made this. This is the way I'm cooking artichokes from now on. The only difference is that I finished it over charcoal.
i dont throw away the leafs i use a steam bath for them with cheese and bread crumbs and they get soft yes throw out some of the 1st layer of leafs but dont do the rest if you want use a preusser cooker then scrape they choke meat off the leafs :)
This lady brilliant! I could watch her all day
Wow, I really like her! More Samin please!
What a great teacher!
More Samin, please!!
I can't stop watching you, lol! Anyways, I'm not a fan of artichokes, but I learned so much! For instance, your kitchen tricks to not only season vegetables from within, but to expedite their grilling process (hence, the grilling taste) Thanks again, Samin!
I love artichokes. Can’t wait to try this one
I love her so much! I'm so going to make this...with frozen artichoke hearts...I"m not going to do all that peeling. Hopefully it goes good in a compost.
I Absolutely love this woman so much so I’m going to Buy her Book.
She makes cooking so easy and wanting to try new food
She is amazing I want to keep watching her cook
I'm reading your wonderful book right now. Page 64, Fat's effect on flavor. Good read!
