Hey, just thought I'd point out that even the silicone muffin liners are designed to be used with a muffin tin. That's why the muffins in the video are kinda' deformed. Also, the way that they're positioned in the oven (in the video) would cause them to cook REALLY unevenly. Aside from that, those look so yummy and I bet they'd smell great with the fresh fruit and whole wheat flour!
Just made them and bringing them to riding class tomorrow, we used to always have tea and coffee and a treat after class but now everyone is so concerned about their sugar intake and we have two persons who are eating vegan most of the time so it's been close to impossible to bring anything now, but these are perfect! The egg white is usually fine as they're not full time vegan! Haven't tasted them yet though but they smell fantastic!

Once the base is perfected, just play along with flavors and whatever else you want to add. The best one I ended up with was an allspice pumpkin one. Also, the same batter can be used for pancakes, too.
Coincidently I just made apple muffins last night topped with chopped walnuts (instead if streusal). White whole wheat flour is another great alternative to refined flour and virgin coconut oil for butter.

A tip I learned for honey-pouring so you don't lose any is to use the same cup you measured oil in. The oil helps the honey slide right out without sticking to the sides and messing up your measurement. ;) I'm about to do this recipe--it looks AMAZING. Thanks, Cassie!

When making these I would've added some bicarb soda to make them rise (it would also help them be fluffier and lighter) It would've also made a bunch more cause you wouldn't have to put as much batter in each cup! :)

Mashed potatoes are my weakness! And now that thanksgiving is coming up, I can't wait to stuff my face with my favorite food of all time lol. Do you have any ideas on how to make them a bit less fattening? Or even a way to doctor something else up so that it satisfies mashed potato cravings?
Cassey, I feel you on those people who keep accusing you that these aren't cheap. It annoys me too that they are missing the point. It's about cooking long term and USING THE INGREDIENTS THAT ARE BOUGHT, not just once, but ongoing and trying to use most of it. This type of thinking is why most Americans have no savings and live from paycheck to paycheck. No logical thinking about planning for the future and only about the "here and now" (paying $2 for a muffin and not for the ingredients). SIGH!

I made mine! And i didnt have apples so i didnt use any, & i added way more cinnamon and it came out sooo bitter! Lol! So heres a tip for those of you who havnt made it yet but are planning too: no matter how much you loove cinnamon, add exactly the amount she told you too! Lol not more than that. Or else you'll have to drizzle the bitter muffin with more honey and that less healthy :D

I guess the most you can do to healthify the chicken is by baking it instead of frying it.
All you must do to make fried chicken healthy is bake it in the oven instead of frying it

Agave nectar or maple syrup I think its a good alternative, stevia or xylitol makes more sweetness. :)
