This is basically the exact recipe of the lasagna that I make and it is phenomenal. Got the recipe from the owner of an amazing osteria in Venice! Yummmmmm
boy i am an italian cook. to start the fresh pasta for lasagna is only flour and egg yolks, no salt or oil is needed. then the ragù. celery, carrot and onion are right, but you don't want ribs or bacon (or bacon), you go with ground beef and pork. proper wine. but they are cooked in a deep pan over low heat with tomato paste and tomato sauce or pulp. corrected having put the dough in the fridge but it had to be a smooth ball. I also noticed when you cut that it was too hard. you weighed the flour by eye, did you make sure you put one yolk in every 100 grams of flour? great job with the preparation of the fresh pasta, but considering the American flours (I deduce that you are American from how you cooked the sauce in the third recipe) did you make sure to cook it for no more than 50 seconds? since you did not specify the cooking time. the roux (butter and flour) for the béchamel is something delicate and you put the flour by eye, it's a big mistake boy. the risk of doing as you did is that he goes mad. furthermore, the milk does not go cold but lukewarm otherwise lumps are formed. in fact the bechamel was liquid. probably on the bottom of the pan there was most of the undissolved roux. then the layers do not alternate between bechamel and sauce, each layer must have bechamel sauce and parmesan. If you publish an italian recepi as an non Italian there will always be an Italian who knows it better... Is there a law how to cook lasagna? Is it forbitten to use bacon or pancetta? I watched a ton of videos of different Italian cooks provide lasagne and they do it differently. If he would be an Italien nonna you would never posted the same comment!
