VODKA PASTA on FIRE - Penne Alla Vodka

    Recipe:
    Serves 3, 10 min prep, 45 min total
    Ingredients:
    • 350-400g penne pasta
    • 1 small onion, diced
    • 100g pancetta, diced
    • 3 tbspn EVOO
    • Bunch of basil
    • 2 large cloves of garlic, diced
    • 150g tomato paste
    • 400g tin of diced tomatoes
    • 60ml vodka
    • 100ml water
    • 150ml cream
    • 100g parmesan, grated
    • (optional, but recommended) chilli flakes.
    Directions:
    • Fry the onion and pancetta in a large pan or wok in the olive oil on a low/medium heat for around 3 minutes, or until the onion is fragrant and becoming translucent. Then add the garlic and stir for another 2 minutes.
    • Add in the tomato paste and fry on medium heat for 3 minutes or until it smells cooked.
    • Add the vodka and stir for 1 min, then add the tomato paste, water and basil. Stir every 5 minutes for around 25-30 min or until it all smells cooked and reduced to a thick consistency.
    • Once reduced, take out the basil bunch and dispose, then add the cream, combine and simmer for another 1-2 min.
    • Remove from the heat and stir in the parmesan
    • Cook the pasta for 12 min in boiling salted water as per the directions on the packet.
    • Remove the pasta and drain, keeping 1 cup of the pasta water.
    • Combine the sauce, pasta and pasta water and stir together until creamy (if it’s getting cold, place it back on the heat for another 1-2 min).
    • Serve with a garnish of fresh basil, freshly grated parmesan and freshly ground black pepper.

    I just want to say, I filmed this a couple of weeks ago before the war with Ukraine started. It is not a political statement at all.
    It’s an Italian/American dish using Australian vodka. I am 100% in support of Ukraine 🇺🇦

      As for the vodka, Woolworths has pulled Russian Vodka from Dan's and BWS. Why? Stolychnya never invaded anyone, it's just virtue signalling gone mad.

      I feel sorry for Russia. The west forced his hand to survive, then point the finger, UKraine government are crooks to say the least.
      Russia has been painted the bad guy our whole lives. A constant barrage of miss information.

    Harry, I love watching cooking shows, specifically for watching the antics on display - your shot of vodka is an exceptional case in point. The enjoyment I get from this is immense, BUT, I also have tried quite a few of your recipes. We usually go camping with our youngest daughter and her family which necessitates having gluten-free, lactose-free, fructose-free meals. My son-in-law and I do the majority of the cooking - probably 90%, and you have been the savior of many, many of these meals. I am still trying to scrape enough of the crinkly stuff together to buy your book, being a pensioner is not a lot of fun.
    I still laughed like a complete buffoon when you took that shot of Vodka though!!! Bloody classic!!

Im here for the 3rd time to double check the ingredients before we go away for Labour Day long weekend, we love this recipe, its a camp fave! Ive also cooked your Wagyu Teriyaki recipe too. SO GOOD, nothing beats that over a wood fire flavour.

    You may or may not remember our message conversations. But Wendy and I have been watching for some time now and bought your book (shipped from Australia long before they were available in the USA). We have made several of your recipes! I even bought all the equipment you use, except the knives and the Compact Braai. Although I will probably be ordering the Compact Braai soon- lol! We stetted out watching for entertainment when I got rid of Television afew years ago. We back logged and watched all the videos that we missed and keep watching the new videos and sometimes just turn on a Fire To Fork mix continuous playlist and let it play :)

    Harry, you forgot to point out that vodka is used to intensify the taste. It’s an old Russian culinary trick. I buy ready made sauce with vodka and kids love it.
    Love your work on so many levels, from cooking on the fire to Prado set up. I do a fair bit off grid in my Prado and a camper trailer with 3 kids. Don’t cook anywhere near as much on the fire as I’d like to, but you’re a real motivation. Have tried a couple of your recipes, love the chicken in buttermilk on camp brai. Keep on cooking!!

    To answer your question - I watch every week with the intention of cooking, just like the intention of taking my 4x4 off road much more than I do - but I still love it. When the weather cools down and I can / want to light a fire I will cook your recipes. Keep it up.

    For anyone struggling to open a garlic knob like Harry, place the knob bottom-side down and push with the palm of your hand against the "root". That should pop the papery cover, releasing all the cloves.

    I’ve cooked a couple.
    Don’t care if you stay true or stray from a traditional recipe.
    The hints and tips I pick up are awesome.
    We were going to go with a cast iron camp oven. From a heritage brand, and at some stage I may still get one for sentimental value. On your advice my son went spun steel. Game changer.

    I’ll be honest I’ve bought your book and watch all your videos, but I don’t think I’ve made 1 of your recipes, I mainly watch to see new fire techniques, ideas and how dish free you can make the recipes, in turn it makes me think about the meals I make at home and how I can make them relatively easy while camping, which you have definitely helped 🤙

    Watched you for a couple of months now and haven't had a chance to test out a recipe. Definitely found you for the entertainment though - glad you set up your second channel with all the tech bits. My family and I are getting into camping too so it's good to see someone with a fair bit of experience showing us how it's done.

    do I cook recipes I watch on you tube? not really. I am a chef for almost 60 years and love my food and love to watch other chefs and cooks. Lots of ideas that I use when cooking (just for myself now). Your plating on the bread was awesome. I just started watching you after seeing you host with trip-in-a-van.

    I love watching cooking videos of recipes on youtube, but I've never recreated one myself. I tend to just look at techniques and ingredient combinations and then play around with those when I'm making dinner for the family. Just simple things like add certain spices or ingredients to improve on the standard meal.

    I watch this for entertainment/dreaming of when I can finally go camping with the kids (they are 8, 2 and 1 years old. I'm nervous about my hubby and me being out numbered by kids far from home). But I think this one would definitely be on my list of meals to try.

    I watch your content to improve my camp cooking and I do try some of them out. I have 2 fussy kids so have to pick and choose. Your H/Jacks and Maccas burgers are are hit. And now a stable in our camping trips. Also your method of cooking crunchy chips is a hit….. Dad is now the best camp cook👍👍😂😂

    I have made quite a few of your recipes from your videos and also some from your book. The videos are entertaining in their own right too. The other thing I get from them is gear ideas. Seeing various fire cooking/camping gear in use helps to decide whether they would be useful for us.

    Cooked plenty of your recipes, both from the book and just random ones you do. The corn fritter recipe in your book and cold oil chips gets a working out. As well as the crumb fish with oyster sauce. Keep up the good work

    I have cooked about 20 recipes out of the 57 in the book, many a few times, first go frequently unsuccessful due to heat control. I have also tried quite a few from video's. The charcoal flavour is sensational.
    I get inspiration on cooking methods. I like the new takes and total originality on some of your recipes that are in every cookbook ever published. Your asides on why have been great.
    Your self imposed task to get the best crispy chicken without deep frying is the search for the Holy Grail, love it !!

    I watch you, I watch Almazan Kitchen, Both cook on fire. I watch some Chinese cooking such as Spice'n'Pans. The Chinese ones I copy the recipes as I'm learning, but I don't make your recipes, I get ideas. I love cooking on fire, and built my own pizza oven. Never cooked pizza in it but it makes the best roasts ever.

    I’ve made use of a lot of your recipes. Both camping and at home. Pulled pork in the camp oven is a stand out. Cold oil chips amazing! Had minimal food for dinner last night, made a version of the corn fritters, wife and kids loved them! Also great entertainment! Thanks for the content.

    I have made about 6 of your recipes over the last couple of years. Hash brown jaffles are a staple now when camping. I will be making the cheese bomb from last episode too. So I mainly watch for the entertainment. I love your style of presenting videos, so much better than the everything has to be perfect styles.

    Yeah I make them and sometimes change 1 or 2 non major ingredients depending on what’s in the cupboard or camp cooking box 👍

    Harry have to admit that I made few of your recipes, no where near enough but this one I will do this weekend as we will be away camping on Murray River in Vic.with a bunch of Guys - everyone has to make one evening meal I figure I will knock it out of Park with this one.

    Funny you mentioned kids loving it, this was my favorite dish my dad used to make as a kid. Only problem was the teachers were concerned when I told them my favorite food was vodka sauce as a kindergartner LOL great recipe though!

    I watch for entertainment, and like the serenity of the settings you cook in. Have used a few recipes but have also learnt quite a bit which is awesome. The continued drinking of Colonial is questionable, but I overlook it for the greater good!

    When you put the pasta on the bread board coz you saw it on a video. I'm guessing you got this recipe from "not another cooking show" one of my favourite channels on UA-cam 😊
