Shrimp Saganaki: Shrimp in a Greek Tomato & Feta Sauce

    Ingredients
    1 pound jumbo shrimp, peeled and deveined (leave the tail on)
    1/2 cup olive oil
    1/2 of a medium onion, finely shopped
    15-16 ounces pureed tomatoes
    3-4 garlic cloves, grated
    4-6 scallions, finely chopped
    1 teaspoon dried oregano
    1 teaspoon sugar
    pinch of crushed red pepper flakes
    salt and freshly ground black pepper, to taste
    1 handful of chopped fresh parsley
    4 ounces feta cheese, crumbled
    lemons for garnish
    Instructions
    Season the shrimp on both sides lightly with salt and black pepper.
    Heat an oven-safe skillet over medium-high heat. Cook the shrimp in a few batches for 30-40 seconds per side. Do not overcrowd the pan or the shrimp will steam instead of sear.
    Lower the heat to a low- medium and cook the onions about 5-7 minutes or until slightly golden, translucent and soft. Add garlic and warm through for a few seconds.
    Add tomatoes, sugar, crushed red pepper flakes, black pepper and a little salt. Remember, that the feta is salty, so do not put too much salt in the sauce.
    I like using canned tomatoes. I puree them in my blender to speed up the cooking time. If you are using crushed canned tomatoes, skip the pureeing step.
    Cover the pan with the lid and cook the sauce until it reduces and thickens. About 6-7 minutes. Add the scallions, shrimp and crumbled feta.
    Transfer the pan (if it is oven proof) under the broiler and cook about 5 minutes or until the cheese melts, the sauce is bubbly and slightly charred.
    Garnish with chopped parsley and lemon wedges.
    Serve with crusty, toasted bread or over pasta.

    Thank you Dimitri for your wonderful, wholesome and homely recipes. I made this dish a few nights ago and I accompanied it with your lovely feta bread recipe and boiled silver beet with lemon and olive oil.     Hello Dimitra, I just wanted to let you know that we were in Greece in Sept 2019 and it was my dream since the 80's to go. We loved it! I had a Shrimp Saganaki in Santorini and since then we wanted to have that taste again. About a year and half ago I found your recipe for it and I have been making it since. Your recipe is exactly the same and brings us back there every time. I also have made many of your chicken recipes and my husband and son love them as well. Thank you so much for these recipes. I grew up with a large Greek community and friends so it always feels like home. We also love Paros, and Naxos. Definitly will go back in the near future. Again, thank you SO much! Delicious!     Omg looks really delicouse actully made almost the same dish here the other day, just with the shrimps cooked in garlic fresh shopped coriander and parsley, and made a tomato sauce and rice

      No wine in my house...lol! You can add some ouzo to the pan right after the onions are cooked :)

      Looks great. In opinion. Ouzo is a must here. The flavor from the ouzo makes the dish really different from shrimp fra diavolo

    Please can I replace feta with cheese curds or it is better no cheese at all ? They don't like feta here 😒
