  • Green sourdough with Lucky Charms inside and out? Yes! This bread is a hit with kids of all ages, and it's a fun way to celebrate Saint Patrick's Day.
    The recipe:
    500g baker’s flour (other measurements in baker’s percentages)
    75% filtered water (375g)
    5% white sugar (25g)
    1.8% fine sea salt (9g)
    green food colouring (quantity up to you!)
    Mix together; one hour autolyse
    25% leaven (125g)
    Mix; 30 minute rest
    Stretch and fold; 30 minute rest
    Lamination, adding in 15% Lucky Charms cereal (75g)
    Single coil fold, with 2 hour or so rest after (until it looks properly fermented!)
    Pre-shape; 5-10 minute rest
    Final shape; rest overnight
    Score, then bake covered 30 minutes at 440F; uncovered, resting on oven grate for 20-22 minutes at 430F.
    For toppings, mix a 4:1 ratio of icing sugar and water. Brush on, add cereal, then drizzle with 3:1 ratio of icing sugar and water. Let cool before slicing and serving.
