How To Make Pandan Paste (Concentrated Pandan Juice)

  • A lot of people has been asking me how to make concentrated pandan juice. So, I thought it will easier just to show it. There are other ways to extract the juice. But, this is the method I like to use.
    Note:
    I usually used boiled water at room temperature.

    The clear pandan juice can be used to flavour any foods that you want to have a pandan flavour but not green colour. For example - make agar agar, steaming pulut rice for seri muka salat, syrup for desserts, cooking rice and even for baking breads!

    after all these year...this clip still so interesting n amazing especially when you extract the liquid on 3rd day using a syringes...yes i do use this recipe for pandan butter cake. thanks so much for this vid..or else i would hv just used paste or emulco..

    Pandan leaves are rare and expensive in Germany 🇩🇪. Thanks for sharing your knowledge. Will try your method one day when I get the pandan leaves from a special shop quite far away. I did not know it can be kept for so many days. Good to know. Thanks again.

    Hello Miss... May I use unboiled water? Is there a difference between boiled and unboiled water for making pandan extract?

    Hi, thanks for the video. The pandan juice tasted bitter, just wondering will it cause bitterness to the cake?

      Hi, thanks for watching. It will not taste bitter for this method as the top clear liquid has been discard. Usually you will taste bitter if you make kuih or custard with it immediately after juicing.

    Hi thank you for sharing. I’m just curious before this I tried making seri muka with pandan but I get bitter taste. I suspect because to much pandan but watching you do I wonder if you ever experience something like me

      Hi, Thanks for watching. You will not get the bitter taste if you leave the pandan juice in the fridge overnight and pour away the top clear laye, use the concentrate pandan extract in the bottom.
      However, I have made Seri Muka before but I blend with coconut milk and use immediately. You can check the below link:

    After squeezing the juice, any use of the left over or just discard it in the ganache or composite it ?

      Hi, thanks for watching. I discard them and sometimes I add more water and squeeze again, use the water to cook rice. It is totally up to you.

    Do I need to disinfect all the tools? I have squeezed the juice and put it in fridge for three days but it turns bad and smell sour.

      Hi, I normally used all the cleaned tools. It is best to use boiled water. First time I heard this. Maybe you should for your case.

      Personally I prefer to use food processor. Easier to remove the mush from a wide mouth receptacle than a cylindrical one...

    I tried to make this just now for the very first time and I have no prior experience with Pandan Leaves at all. When I went to two Asian stores no one could help me find Pandan Leaves. I did, however, find Pandang Leaves. Can you tell me if that is the same leaf? I really want to make a Pandan recipe I have. Thank you for your video.

      Hi, thank you for watching. I never heard of Pandang leave. How does it look like? I understand it is hard to find Pandan Leaves in western country. Maybe you should you pandan extract instead. See if you can get Pandan extract in your place.
