  • Water Kefir.....what is this fizzy and delicious drink???
    Water kefir is a probiotic drink containing beneficial yeasts and bacteria that are extremely helpful in aiding our body’s abilities to overcome the "bad yeast and bacteria'" that we all contain in our gut.
    The first documented uses of water kefir grains were traced back to the late 1800s. Although the exact origin of water kefir grains is unknown, some research suggests that it originated in Mexico and that the grains come from the fruit(prickly pear) of the Ountia cactus.
    My husband and I both have struggled with Gastrointestinal issues for years. After doing much research on the topic, we decided to give this probiotic beverage a shot. We, along with several other family members, have been drinking water kefir for over two years. We have noticed many drastic improvements to our health since adding this into our daily routine. Not only is it super delicious and refreshing, it is also extremely easy to brew and maintain in your home. My kids, 5 yrs and 2 yrs, absolutely love this water kefir and ask for it everyday.

    Water Kefir Recipe(1 Quart Jar)
    FIRST FERMENT:
    1 Sterilized quart jar or larger
    1/4 cup of water kefir grains (not to be confused with milk kefir grains)
    1/4 cup organic or white granulated sugar
    1 tbsp unsulfured molasses
    4 cups of purified or bottled water(spring water is best)If using a qt sized jar cut water back 1/4 cup to allow room for the grains . This is perfectly acceptable and there is no need to cut back on the sugar.
    Bring 1 cup of water to boil.
    Add in sugar and molasses. Stir until dissolved.
    After completely dissolved add in the remaining 3 cups of water to cool down mixture. Now add the kefir grains and sugar water mixture to jar(Make sure your sugar water mix is 80 degrees or cooler before adding to grains.)
    Cover, place in an area out of direct sunlight and wait!!!
    About three days give or take depending on the temperatures in your home.
    SECOND FERMENT:
    3- 4 16 oz flip top bottles
    Organic juice of choice(our favorites are grape ,pineapple and tart cherry)
    funnel
    Mesh strainer
    Cheese cloth
    After your first ferment has been allowed to sit, usually 2-3 days, strain through cheese cloth and mesh strainer.
    Measure and pour 1/4 cup of juice (or however much you want) into your
    flip top bottles.
    Add in strained first ferment water kefir into the flip top bottles leaving at least 2 inches space at the top of each bottle.
    Remember to hold back at least 1/4 cup of first ferment to add to next batch.
    Seal your bottles and let sit on counter 2-3 days.Burp bottles at least twice a day to prevent them from exploding.(yes, that can and has happened!!!)
    You can experiment with flavors . Add in frozen or fresh fruit as well as herbs to create your own unique flavors.
    After second fermentation chill in fridge and enjoy!!!

    Great video for a water kefir newbie that just ordered FLORIDA SUN KEFIR
    CULTURES!
    One thing I am unsure of-
    How do u store the multiplied granules after first ferment but between batches!
    Do u keep them soaking in plain filtered or sugar water -sealed or unsealed-refrigerated or on counter???
    My plan is to make a batch a week and second ferment bottles as ginger ale!
    Will that work???

      Hello! Thank u for watching.
      Ok… we have chickens and up until recently had pigs so I fed all of my extras to my animals.
      They can also be blended up in smoothies for an extra probiotic boost.
      If you’re wanting to save the extra Granules to give away or for future use they can be stored in the refrigerator in plain water for up to about a week but it’s best for them to be stored in sugar water or to be dehydrated.
      If granules are kept in the fridge for too long though it can cause a lot of stress on them and they may not work properly.
      Are used to make a ginger and apple kefir and it was one of our favorites. Tasted a lot like ginger ale!

      The easiest way is to wet the clean jar or bottle and then put it in the microwave for 3 minutes.
      They can also be boiled or done in the oven but I just find the microwave is a much easier and quicker process.

    Can I use less sugar? I find it too sugary.

      Thank u for your question.
      It is important to use the 1/4 cup of sugar per 4 cups of water or it may not ferment correctly. By the time it’s ready for second ferment most of the sugar should have been eaten up by the beneficial bacteria. If it’s still too sweet for you can let it sit longer. When you do the second fermentation you can add less juice if you want and let it ferment until there’s no sugar left. The sugar is just meant to be a food for the beneficial bacteria and allows them to multiply.

    For the 2nd ferment I love raspberries fresh or frozen, it is sooooo good!, also fresh ginger with fresh lime or lemon (juice with the pulp) is really good too!

    How much sugar is left from the fruit juice?

      It depends on how long u leave it for it's second fermentation.
      I taste test it every day until it's exactly the way we like it.
      My girls like it a bit sweet and my husband and I prefer it with little to no sweetness.

    I am struggling right now with mine and hoping I could ask a question for anyone who can answer. When I got my water kefir from someone, they were very smelly and I found out they were over mineralized. So we used just plain sugar and and seems to have saved them. But we ran into an issue. We find that after fermenting them for 5+ days the water is still sweet. Does the water stay sweet? I thought it should taste fermented. But ours doesn't and doesn't have bubbles either. We do one to one ration of kefir and sugar. We have been trying to keep them alive for 2 weeks but have not got anything fermented from them. They are reproducing...we started with 70grams and have 127grams now...but no fermenting or fizz. I am at a loss.

      @Sbannmarie298 we have kinda just done trial and error right now. Haven't found an answer, but our kefir is doing better and it is fermenting on the first round, but second ferment now is hit and miss. We did find that somethings don't ferment for us. When we use grape juice for second ferment it is very bubbly and fantastic. Yet when we use guava juice we get bubbles but they don't stay and go flat immediately. Fresh lemon juice seems to work but using tea bags with fresh fruit doesn't seem to carbonate 🤷🏼‍♀️ seems to just be hit and miss.

      So sorry I am just now seeing this.
      Sometimes your kefir grains get overworked and need a resting period. When mine get sluggish or start slowing down I rinse them well and put them in plain spring water in the fridge for about a week and let them rest. Once you pull them out, bring them back to room temperature and give them new sugar water they should thrive.
