I love the idea to use the three different ingredients: poolish, pâte fermentée and levain. I will try it, but … I have to heat my kitchen or my dough (and all ingredients) will take much longer. My kitchen never (!) has 25 degrees Celsius - not even in summer 🙄. (Okay, I don’t live in Spain, Italy, …, but in Denmark😬) It will be fun to discover the time needed in … my kitchen 🤔🤣, but I will try it this coming week! The only thing I don’t understand: why don’t you use a better mixer? Yours would make me crazy!!! I am using the Ankarsrum - it never has the intention to “fly” 😂

I’ve made excellent Ciabatta but no commercial yeast, just sourdough. I see no advantage in taste or flavor with anything but Sourdough.
