    This is great.
    You’ll notice how he plays a game of “Guess Who” when picking wines.
    You let the Guest eliminate the wines they don’t want for you, then choose the best fit from what’s remaining. A good Somm gets to the final short list quickly and succinctly, whilst ensuring the Guest feels in control and comfortable.

    Good to see a wine list that is not stuffed with things that can easily be found in supermarkets. Given restaurants mark up wines often a triple what they paid for them, it's reasonable to expect a good list and good advice from a knowledgeable team. My own belief as an ex wine collector, is that wine matching with food is a bit of a myth and that top quality wines are best enjoyed on their own. Hence I never buy expensive wines in restaurants - I go mainly for the food. I've been to Fallow now (having seen a good few vids) and enjoyed the experience.

    I think the biggest part of being a sommelier is knowledge of what goes in to the wine and the culture it comes from. You can open a customer who might not like branching out of what they know with some in depth knowledge.

    I remember filling in on some nights as sommelier/bartender with a wine list of 120+, a lot were varying ages of the same grape but it made everything a nightmare doing it yourself having to dive into the cellar. A lot more places have gone with smaller wine lists recently especially given supply chain issues and it's great that you have a dynamic list.
    It was a real pain in more chain/hotel restaurants back then where they just added more and more supply deals no matter the quality. Its forced places to adapt to care about the wine's accompaniment to the food as you can't afford to stock as many lines as you could before.

    seems about the exact same of what i do as a restaurant manager every night with a wine list with over 200+ wines on it, know the feeling ! ✌🏼

    I never really liked wine but one day my friend who is a server brought a semi fancy ($60) bottle to a party and it was like nothing I've experienced prior. So smooth and flavorful.

      If you're really interested in learning the basics for wines, there's a program called WSET Level 1 in Wines that you can look into. Small advice cos I've gotten into it from a Hospitality School
