Sonica's emotions seem to be more visible around Jamey than Sonic's are around Amy. But then, Females usually are more in tune with their emotions, while males (like Sonic) often try to hide them, so that shouldn't be surprising.
If you want to look at the scientific side, the reason for females showing more of their emotions is because they have more of the hormone known as ‘oestrogen’, which makes a person more emotional.
Males are less emotional due to our hormone, ‘testosterone’.
