A New Take on the Bacon Rib! | Harry the Horse BBQ

  • The "bacon rib" is a popular bbq item developed by LeRoy and Lewis that utilizes bone in pork belly (aka pork belly attached to spare ribs) to create a succulent, cured, bacony, and unique bbq experience. Well, that inspired me to develop the "BACON BEEF RIB"! You get all of the saltiness, savoryness, and addictive qualities of bacon mixed with the smoky, juicy, succulence of beef ribs. This just may be the best new bite in bbq! The very least I can say is that these beef ribs were NOT HORSIN AROUND!     P.S. make sure to adjust the amount of bacon cure you use to compensate for the weight of the bones of the beef rib...you won't be eating those.

    400g kosher salt
    200g granulated sugar
    60g pink salt
    15g roasted granulated garlic
    15g toasted granulated onion
    15g coarse black pepper
    5g maple sugar (optional)
    5g herbes de provence
    2g red pepper flakes

    Harry, this was your best video yet! Awesome original idea to do a Bacon Beef Rib. One of my favorite things to do around St Patrick's day is to grab a bunch of corned beef from the grocery store because you can get it super cheap. Last year I stocked up on a bunch of Corned Beef points at $1.99/lbs! Then I soak them for a few days to get some of the brine out because those packaged ones are SUPER salty, and I smoke pastrami. Now you have me wanting to make a Bacon Beef Rib and then take that cured rib meat and make the ultimate Rueben! I bet it would go great with a Labatt Blue!

      Much appreciated! Yeah I wanted to try and do something that not many have done but would still be delicious! Thats a great idea for some cheap and easy pastrami and Reuben’s all year long. Yeah I bet if you sliced up some bacon beef rib, it would make a killer BLT or Reuben sandwich! Always appreciate you watching!

    Man Mr The Horse!! I think you may have outdone yourself here. Those things looked divine. Just curious if you have ever tried the beef bacon from Porter Road? That stuff is delicious and makes a killer BBLT (beef bacon lettuce tomato)

      @@hojobbq much appreciated Ted! I haven’t made pastrami beef ribs yet but I can imagine it would taste eerily similar to regular pastrami. I’d say these are a lot less salty and are missing a lot of the warming spices like coriander, all spice, star anise, cinnamon etc. These were salted nicely all the way through, had some nice complimentary flavors with the garlic, pepper, and some of the herbs in the cure, and then a slight cured taste. It’s weird to imagine, but it was legitimately a fusion of the flavors of Texas style beef ribs and the flavor of bacon

      Swine & Bovine did pastrami beef ribs a couple weeks ago. They looked amazing, and I think they are much easier to eat because they aren’t so rich. Mr The Horse should definitely give them a try!
