Does adding the larger tires change fuel economy? And do you have to recalibrate or adjust the settings for the larger tires? Speedometer, etc

Is the overall height under 6'1'? I have this same truck but I park in a parking deck daily with a max height of 6'1'.

For a few seconds those 20" wheels almost looked ok. Then I saw mine 🥴
It kills me I paid $1295 for those same wheels.🤪
Why not 285/65? Just curious why not more sidewall vs little less width ?
Or loose the 20" wheels and go with 17's.
