Recipe with the least ingredients yet the most difficult to execute. I've already failed my fifth time using different measurements and techniques. I'll try this one on my 6th attempt. EDIT: i tried this twice, followed every step to the T, and I can say this recipe works. HOWEVER, I got to say, for everyone who's gonna attempt making french macarons, to first KNOW YOUR OVEN. I've almost succeeded but my oven was too hot so it had bumpy tops. Invest in an oven thermometer and make sure to set at 150C in conventional setting, but if you're using convection (fan-forced), set the temp at 125C to 130C. (That's where I made a mistake, hence, my macarons had feet, not hollow, but lumpy/bumpy tops, some even cracked). It's also better to overcook them a bit than to undercook. Once they're filled and stored, they will soften the next day. Also, don't use cold (straight from the fridge) egg whites. It's harder to beat to stiff peaks. Room temp is fine. Aged egg whites are better. Just giving tips based on my mistakes. 🙂 These may or may not work for you. To each his own ☺️

It’s really easy to mess up when making macarons. Possible mistakes you made: I You didn’t sift your almond flour and put it in a food processor II you over mixed the batter III you under-mixed the batter IV your egg whites weren’t stiff enough Etc.

Macarons use almond flour which is basically just ground skinless almonds Regular flour would give it a bread like consistency instead of the light macaron consistency.

pch _61 so I have five speed on my hand mixer that has only one whisk attached (from kitchen aid brand), I use the second lowest level for 2 mins and then level for 1 min and lastly 2 mins on the lowest speed. After that I mix with my hand so it get to stiff peek for about 30sec.
