Great video buddy. I loved it. Three key elements of the conversation are:
1. Always wipe the cast iron , never use soap, if you do, you are dead to me.
2. Always let meat rest, chicken, beef or pork
3. Nothing like green onions - nothing.

That was a great job brother. I can smell it from here! Yeah i shudder if i see people washing the cast iron pans with soap and def not in a dishwasher for the love of greenie! Green onions are beauty, love them.
Thank you brother. Yeah, I had to explain to a friend of mine not to do that after she washed out her cast iron Dutch oven. So she got a quick lesson on care and how to re-season cast iron if needed. Because it does go against all your instincts to not wash it lol

I'm surprised France hasn't come for me yet to be quite honest lol. I was born and raised outside of Pittsburgh but this flea market I think was the one in Brookville. Hazen Flea if I remember correctly. But it was in Amish country. Only time I've ever heard proper Pennsylvania Dutch being spoken when I passed a few of the girls walking back to their tables.

Cast iron is the way to go. I think a lot of especially the younger generation is intimidated by them, but they're glorious.

Well I mean, you're in the heart of the best olive oil in the universe haha. I do enjoy cooking. I find it almost like meditation. And it's very pleasing to take a pile of ingredients and end up with a tasty meal haha

And not something you should be intimidated by. I think a lot of the younger generation is a little afraid of them, but they are the flavor enhancers lol

I may do that one day. Maybe I'll get a rusted out pan at a flea market and try to resurrect it. Cast iron scares a lot of people, but if you stay on top of it, it's pretty easy.
And it's crazy how fast it happens too. Just a massive gush and bye bye flavor lol
