The SparkFun MicroMod Single Pair Ethernet Function Board introduces 10BASE-T1L Two-Wire Ethernet protocol into the SparkFun MicroMod ecosystem. Using the ADIN1110 Ethernet transceiver from Analog Devices Inc., this Function Board provides a development tool for long-range, 10Mb/s single-pair 10BASE-T1L Ethernet applications.

Please do similar board for 10BASE-1TS with multiple devices on a single bus. Maybe with daisy chaining, and auto-termination at the ends? Would be cool.

Gigabit ethernet capable of up to 2.5Gbps?? That seems like a weird definition.

The history of _Fast Ethernet_ section of this video was mangled in translation from technical English to technical PowerPoint slides to management PowerPoint slides to Marketing Engrish.
I believe it was talking about the data rate possible per pair for different signal encoding systems. With the history starting at 100 Mbit twisted pair. (My history with Ethernet started in 1983 with 10BASE5.)
10Gbit Ethernet over copper does transmit 2.5Gbit per pair. The other speeds mentioned also had some historical significance.

It would be more accurate in a way to say 10 Gigabit Ethernet is capable of speeds down to 2.5Gbps (2.5G and 5G are the same protocol as 10G twisted pair but clocked slower. totally different from 1000baseT)

PoE on single pair?

The advertised product does not support transmitting power, just as most Ethernet devices don't support PoE. Transmitting power is an optional part of the single pair Ethernet standard.
My limited googling taught me that it is conceptually like PoE, but electrically very different, so they gave it a new acronym; PoDL for _Power over Data Line_ or possibly PoDl for _Power over Dataline._
The amount of power that can safely be delivered depends on the specifics of the twisted pair, the devices on the cable, the voltage selected, etc... It isn't complex electrical engineering, but specifying a functional system is nontrivial.
