    TIP!!!
    ✅if you can get your hands on a oven safe thermometer please do this helps you to make sure not to over cook the turkey!
    ✅for each pound you roast for 13 minutes (_ x 13=_) divide the total by 60 that’s how many hours!
    ✅ how to Thaw a turkey properly: Thaw turkey breast side up, in an unopened wrapper on a tray in the fridge
    Allow at least one day of thawing for every 4 lbs of turkey.
    Keep turkey in original wrapper and place on tray.
    Use turkey within four days after thawing.
    ✅fry brine turkey for at least 24 hours!
    Ingredients:
    1 whole 14-20 lb turkey
    Coarse salt- 7 tsp
    1 tbsp black pepper
    1 tbsp dried poultry herb blend
    2 tsp garlic powder
    3 sticks of unsalted butter
    8 minced garlic cloves
    2 tsp fresh chopped thyme
    2 tsp fresh chopped rosemary
    2 tsp fresh chopped sage
    Extra:
    3 celery stalks
    1 lime
    3 carrots
    3 garlic heads
    Fresh herbs
    1 cup chicken broth
    1 serving of love💕

    It's amazing that you show how to cook a turkey in 4 minutes, while some people need a 45 minute video on how to toast a slice of bread. Your turkey looks perfect with the moist meat and crispy skin. Your family is lucky to be sitting at your table on Thanksgiving...I can only imagine. Cheers!

    So glad I picked up your cookbook. I’ve done two recipes out of it so far, and it’s really nice to be able to just glance back and forth and figure out how much of what I need. Mi esposa es de mexico y it’s nice to be able to make dinner and have her be thrilled about what we’re having.
    Gave the leftovers (albóndigas) to my brother and he said “A++ one of the best soups I ever had”
    So quite literally everyone wins! So much beautiful family time has happened around food thanks to you (long before the cookbook).

    It's recommended that the white meat of the turkey be cooked until it gets 165 but the dark meat is 170 . This what a lot of people have the hardest time with this because the white meat cooks a lot quicker than the dark. This is why we baste and use butter to slow down the cooking process. I also use cheese cloth on top of the turkey. This will help hold the butter and when you baste . Take off the last 20 minutes and you will have the picture perfect turkey every time. I worked for a restaurant and have to cook over 500 turkeys for Thanksgiving every year.

    Awesome recipe Claudia, I brine our turkey and then smoke it in our large smoker after giving it a good rub with several spices and herbs. You Turkey looked so good!!!

    Hi Claudia wanted to ask a couple of questions if you don’t mind. 1. Do you wash the Turkey 2. Cover the Turkey when putting in the Refrigerator after Seasoning When Roasting do you cover it. I’m hoping to find your Gravy video. Thank you and Happy Holidays, Irene

      Yes wash the Turkey and once you dry brine it you leave it uncovered. In the oven I'm not sure. I'm making it now but if I see it getting to brown I will be covering it with foil

    Turkey looks great, but I have a major question.....what did you do with all the goodness in the bottom of your roasting pan? All them veggies and herbs had to create an extremely wonderful stock! Hopefully you post a video using it to make dressing and gravy.....👍

    Hi !! Claudia Happy Tuesday 😊 Wow such a pretty golden garlic herb 🌿 turkey so juicy in the inside of the turkey... I love when turkey has that pretty golden brown .     Claudia I have a question what did you do with the vegetables on the bottom of the roasting pan after the turkey was done or was that just for flavor while cooking? Also where can I buy the thermometer thank you❤

    You need to tell people your doing a dry brine some people don't know that and by allowing it to be in the refrigerator your allowing the skin to dry out for a crisper skin your doing well some like a wet brine but to each their own

    Looks so yummy! Can you use regular poultry seasoning or fresh herbs instead of the freeze dried poultry mix for the brine? I’ve never seen this in my grocery store. Just wondering. 😊🍁🦃

    I never understood how brine can penetrate through the turkey’s skin to the meat but I will give this a definite try with a couple of cornish game hens as a quick practice before Thanksgiving Day. It looks great so I’m looking forward to it. BTW, I had preordered your book at Amazon and I received it on my birthday. It’s a beautiful cookbook with amazing photography.       The dry brine makes it so that all of the moisture rises to the top, then it gets sucked back in along with all of the seasonings.

    I cook my breast and leg thigh section separately.
    The leg thigh back section gets cooked to 165 and the breast section gets cooked to 150.
    Both will coast up another 5 degrees out of the oven depending on how hot the oven is.
