How Dutch Gouda Is Made At A 100-Year-Old Family Farm | Regional Eats | Insider Food

  • Every year, 650 million kilos of Gouda cheese is produced in the Netherlands. Most of it is produced industrially, using pasteurized milk, but there are 280 farmers across the country still making raw-milk boerenkaas, or farmer's cheese. And there are only two farms that take their cheese to the next level, making Boeren Goudse Oplegkaas, or aged artisanal Gouda, a special type of raw-milk farmhouse cheese that must weigh at least 20 kilograms, must age at least two years, and can be made only in the summer with cattle grazing in the Green Heart region, between the cities of Amsterdam, Rotterdam, and Utrecht.
    We met with cheesemaker Marije Van der Poel, who lives on an island in the village of Rijpwetering in South Holland with her husband, Hugo, and their three children and makes 15 wheels of aged artisanal Gouda every day at the back of their house.

      You'll probably have to wait another year until everything has opened up again, but lots of cheese farms also offer workshops. So you can make your own tiny cheese wheel (if you secretly still have the dream of having a whole wheel to yourself)

    I'm dutch, after seeing this video I looked up where they sell it (I love a good Gouda cheese but this is on another level). Turns out they sell this exact cheese from this family in a store within 10 minutes of my house. I'm so happy

A lot of people who are in their late 30’s and so forth have harsh accents and sometimes have a different way of expressing their words than todays Millennials and Gen Z, who have easily learned the language through the bigger Western (American)media exposure in the 90’s.

      Actually 90% of the Dutch population speak English fluently. I used to live in Groningen in the Netherlands which is a small city, and never came across anybody that didn’t speak English.
      They’re all taught it from primary school :)

    When I was 15 I visited Holland with my football/soccer team for a tournament and we did a cheese tour and saw how they made the Gouda. I’m Mexican American so I brought a bunch of it back home with me and use it to make quesadillas! This was in 2005 and those were still the best quesadillas I’ve ever made lol

    In 1963, we moved to Europe from the states. Living in Heidelberg, during spring break in March, we drove up to the Netherlands. One of the lovely places we stopped was a private cheese making firm in Gouda. We brought a big huge wheel of Gouda to back to Germany with us. It was fantastically wonderful. We had cheese for breakfast lunch and dinner. A large slab of cheese between two pieces of German bread with a little butter, out of this world. One of my favorite memories.

      Having had both industrially made Gouda cheese and this artisan Boerse Gouda cheese, I can assure you that it definitely is real special. The industrial cheese doesn’t hold a candle to this good stuff.

      What are you on about? Every Dairy farmer knows HOW to do it, but it's more economic to just deliver the milk and let the cheese making over to specialized companies these days. But even as far as the 1950's Farmers were making their own cheese.

    The interesting thing about the wooden press molds is that scientists found out that the bacteria developing in the wood actually reduce the growing bad bacteria. Just like in our guts. Of course if you take care of the wood or your guts. Beautiful :)

    As a dutch person I can confirm that this woman tries to express so much more about her product than she does in English.

    She talks like my great-grandfather. He only came to the US in 1953, after fighting in the Dutch Resistance. He spoke English just like this. Even so much as confusing "learn" with "taught," just like Marije. It brings back so many memories.

    I come from South Africa and grew up eating Gouda cheese, thanks to our Dutch/Afrikaans community, and although it was locally made, it was very delicious. But I have no doubt that the authentic Gouda cheese made in The Netherlands must be extremely tasty and delicious! Would love to visit Holland soon, I love the Dutch, they are such wonderful people! God bless the Dutch!

    This is one of my favorite cheeses! I broke many wheels of aged boerenkaas as a cheese monger so it was such a delight to see this extraordinary artisan doing the same with her own cheese. I could almost taste the crystals

      Its interesting how you notice the difference in correct / incorrect English as you are a "native" speaker , but we often naught take into account where the English language derives from. So our ego tends to separate our hierarchies as to what is correct or incorrect so we patronize the other with a sense of total correctness, vice versa as well. Words are spells, which brings you to magik

    I discovered aged Gouda cheese about 10 years ago at Costco of all places. I’ll buy the Dutch one of course and I love it. I enjoy my slice of Gouda with a dark beer. It just melts in your mouth!
