Well done my sister, but I have never used secting leaf, this is my first time of seeing it with you. But for me I use bitter leaf and tea leaf it makes the aroma to come out well and sweet...especially with fresh fish.

Hi Flo, I have a few questions.
    1. For the beef, can I grill it in an air fryer instead of an oven?
    2. If I want to add mackerel in this recipe with the tinned banga, do I cook the fish separately first or grill it raw and boil like you did with the beef here?
    3. How do you have fresh food delivered from Nigeria? I’m in the UK but I’m not able to have food stuff delivered as it’s quite pricy so I wanted to know if you have any recommendations on this?
And, your recipes are amazing. I also really like how you are authentic and real with your content and hearing your voice with our accent and inside jokes really makes me happy.
    Thank you.

    • @FloChinyere
      @FloChinyere  8 років тому +2

hahaha ... you know you make food videos when you watch gadgets, lighting and editing when others are watching the preparation of the meal!
But it pains me that I had to start using this camera because my rugged one has packed up! This one is not for food videos at all! Nobody has got time for avoiding splashes on the camera. hihihi
No added lighting o, this is the usual lighting in my kitchen. A better camera just makes everything so crisp.
I was on vacation ... I'm still enjoying the time off because my kids have not resumed school so we are all enjoying the holidays. :D Thank you, I hope you are good!

Ogiri is not locust beans also known as iru in yoruba.ogiri is what Igbos add that is kind of lightish grey into bitter leaf or ofeakwu.if u put locust beans like dawadawa inside your banga soup it will destroy the taste

    • @tamanawilson9265

Yes ogiri okpeyi is fermented locust beans, the same as dadawa and iru.

Nikky scent leaf is nchanwu while uziza (false cubeb) is totally different. If it's been a long time you smelt scent leaves, mint leaves can smell like scent leaves to you. :) But no, they do not smell the same and do not taste the same in Ofe Akwu. Some people like it though.

I usually use ugu leaves or spinach in my ofe akwu, but may try nchawu leaves for a change. I'd also usually use nchawu leaves when cooking yam porridge.

Ahhh if you have nchanwu where you live, please use it for Ofe Akwu, it is the best match for this stew. Nchanwu and red onions combine so well in this stew.
Those who use this to eat swallows (eba, semolina etc) can use ugu or spinach because they tone down the sweetness of the stew but for boiled white rice, boiled potatoes, agidi and boiled yam, nchanwu is the best. :)

nice recipe.I want to follow this next time, but I missed where you add the local banga spice, did you add any? I've watch the video many times for it.

This is Banga STEW, the Ofe Akwu of the Igbos, not Banga Soup. But the process is the same, add the local Banga Soup spices when you see the red oil at the top.
