    Blondies base
    230g plain flour
    1 tsp baking powder
    170g butter, melted
    200g brown sugar
    2 eggs
    1 tsp vanilla
    110g blueberries
    100g white chocolate, chopped
    Blueberry syrup
    140g blueberries
    30g caster sugar
    2 tsp lemon juice
    1 tbsp water
    Cheesecake
    1 egg
    1 tsp vanilla
    120g cream cheese
    40g butter
    30g caster sugar
    1. Preheat the oven to 180 °C. Line a 25x25cm square tin.
    2. To make the blueberry syrup place 140g of blueberries, caster sugar, lemon juice and water into a small saucepan. Bring to a boil for 5-7 minutes until the berries start to break down. Take off the heat cool slightly and push the mixture through a sieve. Set the juice aside.
    3. For blondie base place place the melted butter, brown sugar, eggs and vanilla whisk together, then fold through the flour and baking powder. Then fold through the 110g of blueberries and chopped chocolate until combined. Set aside.
    4. To make the cheesecake, in a bowl whisk together the cream cheese, caster sugar, butter, vanilla and egg. Mix well.
    5. Place the blondie mixture into the prepared tin. On top dollop over the cream cheese mixture and then drizzle over the blueberry syrup. With a skewer/knife swirl through the mixture.
    6. Bake for 20 minutes until the top is just set. Cool in the tin then chill for at least 2 hours. Serve sliced into squares.
