    Dski you have moved up to being my favorite Bbq UA-cam channel to watch. I have learned so much from watching you in action. I stay up until well after midnight here in California watching you work . When Dski talks I listen. I just want to encourage you to continue to make these outstanding videos, you are the man. I watch a lot of Bbq UA-cam channels but non compare to yours. I do a lot of backyard BBQ ‘s myself, but I find myself checking in to see how you do it , then i try it guess what it works. You should enter into Bbq competition, you are certain to be at the top . Keep up the great work.

    I love your videos my friend.
    I found one of these units in a closed down restaurant and going to use it in my own restaurant!! We will be using all your methods.
    However i noticed it has 2 pipes coming from the right side, im assuming one is a drain and the other for a gas connection.
    Does it need a gas connection?

      My model, the ACE MM only has one which as you said is the grease drain. If you saw one with two then it would probably be for the gas line of the Ole Hickory gas assist model. Thanks for checking out the video. Whichever you pick, you cant go wrong for your restaurant. Take care.

    D-Ski I just wanted to ask you what is your opinion of Char-Broil grills and products , online i see some very innovative products by them. I am considering several products to purchase from them. Your opinion carries a lot of weight for me . You are the man , keep the great videos coming!

      Stephen Spann Hi Stephen, I have never cooked on a Char-broil grill but I do know that they offer an array of models at different price points. I also saw that they are made of quality materials which should last for quite awhile. Is there one in particular that you are looking to purchase?

    Looks amazing! One question though, what temperature would I pull the pork butt off if I just wanna slice it instead of making pulled pork?

      Antonio Baladez Hi Antonio. The safe internal temp for cooking most pork is between 145-160 degrees. I would lean more towards 160 which should give you some good slices. Thanks for checking out the video.

    Wow all this Delectable food. Ole Hickory does nice job, It looks like you need some expanded metal to sit on bottom of your basket. Congratulations on your channels growth. I happened to see comment on your huli huli chicken video, I must not have read the whole comment originally, I revisited it and seen you mentioning to check out your site, I did, Now I'm curios are you a Dentist. Your Demonstrations and meals here on you tube are great, You also have great quality videos, very clear and well edited. I was curios now that you have ole Hickory, How would that compare to Lonestargrillz insulated cabinets. It seems similar except ole Hickory has convection feature. As a pit master what's your thoughts on the Masterbuilt series 560 and 1050. Well Enjoy the Holiday.

    Malcom Reed from how to bbq right uses an ole hickory and I think I’ve seen him use a lot of briquettes in it, have you considered using briquettes? I ran across your channel searching up ole hickory I’m considering buying one

      Yes. I’ve used Kingsford “blue” on a few occasions and it works well. The ole hickory is an awesome smoker!

    Very Nice! For curiosity's sake would you stagger the times that you put the Chuck Roast on the smoker so that it will be an equal time finishing cook time.

      JAMES MOORE Hi James, That could be an approach based on general knowledge of knowing that chuck roast finish quicker but for the video I wanted to show all items being added to display the versatility and capacity of the Ole Hickory. Have a great holiday!

      Stéphane Montour Yeah, The convection fan does make some noise. I think I’ve gotten use to it. I’m planning on reaching out to see if this is normal. It doesn’t bother me much and the food comes out excellent! Enjoy the rest of your holiday and thanks for checking out the video!
