- The cuisine of China has influenced just about every corner of our world, but do you know what people in this part of the world actually eat every day for their staple meals?
Porridge here is a deliciously simple matter of cooking rice until it no longer can be defined as individual grains, and then seasoning it gently with salt, white pepper, and a basic bone (or occasionally vegetable stock) broth.
Rice noodles come in a few shapes and sizes, but are usually paired with a simple yet strong tasting soup like the 'Nam Tok' you see in this video.
**You can order a plain broth, however, only on occasion will this NOT contain meat, usually the difference is going to be on the amount of chilis and/or spices/herbs.
While Thailand does have its own styles, recipes, and fascinating micro-cultures when it comes to "Delicious Asian Food," it is the simple meals like porridge with pickled vegetables or rice noodles in beef bone broth that so obviously show the thousands of years of connection to the original recipes from China.
These meals are ones that people all over East and South-East Asia are eating every single day, and I love seeing how even in the year 2022 one can really feel connected to all that magnificent (and yet at its core so simple!) food history.

1. Porridge
In Thai, 'Jok' is the porridge, which in Chinese is "Zhou," and you can follow the more detailed descriptions of extra items to order as I've written throughout the video.
2. Noodles
In Thai, 'Kuay Teow' are noodles (which include many kinds), this specific kind Li is eating in Chinese are 'He Fen,' and in Thai are called 'Sen Lek' (thin rice noodles), and again you can learn more about the different soups, and more types of noodles, following the notes in the video.

Good morning Joel, Li and ALL of my BRUCREW. In the Philippines it's called LUGAW(plain rice porridge). You can partner it up with hard boiled egg or tokwa't baboy(fried tofu and pork). We also have different kinds of it. ARROZCALDO is mainly chicken slow cooked in the porridge for a long time, sometimes they also put coagulated chicken blood cubes in it. And we also have GOTO porridge with beef or pork inards. I forgot we also have some of the sweet ones, Chocolate Rice Porridge called CHAMPORADO. Sweetcorn Porridge with coconut milk or GINATAANG MAIS. Sweet mung-beans porridge with coconut milk or GINATAANG MUNGGO.
Basically LUGAW is not just delicious but fun to eat because you can partner it up with almost anything. I remember eating it with OKOY (Pumpkin pancake with shrimps) and LUMPIANG TOGE(Bean sprouts spring roll) or LUMPIANG GULAY(Vegetable Spring roll).

Porridge was probably common a few decades ago. These days, it is quite rare. That is, most people don't eat porridge anymore, except in hospitals and during fasting.

As others have said, I enjoy when Li has the cam time to share her perspective and tastes. Some times the descriptions come across as flawed English (no biggie), and at other times her choice of words actually gets deeper into the basics of why she likes what she likes. Your drone footage and selection of music is always appreciated. And, the featuring of "everyday" meals is very informative. But...the most memorable of this video (for me) was Li's use of 7 with her noodle dish. She shared a very personal glimpse of how she applies beliefs to her everyday way of being. I must admit, I'm not a fan of rice porridge. I keep trying it, flavouring it differently, but I don't think it's for me. I've spent years perfecting cooking rice to have some bite, and this is like an accident 😅😅

I have vinegar in my dumpling & wonton noodles, but not my taste to go into porridge. They were invented in China because there are not enough grain rice to feed whole lots of people so they have to add more water to make porridge to ensure everyone is filled with their meals. That Mountains of Noodles are more of Vietnam influenced than China.

Another thing about Congee amongst Asians is that it is a late night social snack.. where besides a huge common bowl of congee is accompanied with multiple small dishes ( entrees ) and of which is shared ..and man those Deep fried donuts are dunked into the congee where it absorbs all the yumminess of the congee 🤤😋😳drat I’m hungry again 🤦♂️😂. Joel, I'm sure you know very well that Asia doesn't equal china (even though your caption suggests otherwise) and that although china surely has had influences on the rest of Asia's food, there are still distinct differences amongst different asian countries.
just off the top of my head, I feel like china has more oily dishes compared with healthy ones. Korean food is more heavily vegetable and soup based with some fried dishes and Japanese cuisine is heavily seafood based with similarly a lot of veg and soups.
Japan also gets the distinction of having the most three-starred Michelin restaurants in the world surpassing France back in 2011.
then we can travel beyond East Asia to south-east asian countries and then it differs again. please don't throw everyone in the same basket.
that's like saying all europeans eat the same thing just because some things are staples such as bread when we know that that isn't the case. British food for example is by comparison to other European countries, not the most appealing.

First off, you’re right in assuming I haven’t been to every town in all of Asia. But secondly, all 12 of the countries I have been to around here DO indeed eat rice porridge and/or rice noodles every single day.
This specific recipe is eaten in Thailand, but it comes from China of course, but I have many friends (from India to Japan, Pakistan to Korea, Indonesia and Philippines and more…) who happily tell stories of the daily pairings with rice (and/or rice noodles).
