I was like, "I thought it's called an instant pot because of it being faster than the original process". I'm thinking about getting one to make yogurt, so it's good to know it works for this too. This video is so similar to my stove top recipe-- without the boiling over part. I also don't use whipping cream. I usually find my curds on the dryer side, and if they're too dry, I just add some whey back into the food processor. I start with a gallon of milk and end with 3 tbsp of salt added into the food processor. Maybe I just like my cream cheese softer, but I let it spin for a bit longer. And, of course, some of this might be different in an instant pot.
@@Nicole4262-f8m The yogurt cultures must ferment for at least 6 hours, usually 8-12 hours at about 110 F. That's why you need the Yogurt or Sous Vide setting for yogurt. Using the Pressure setting will be too hot and kill the cultures.

Happy, happy, joy, joy! I want cream cheese but I can't have all the lactose. I can make this with lactose free milk! The hwc will have some lactose but it will be significantly less than if I was using milk with lactose in it. Whooo hooo! I may try it with Tara gum and see what happens.
Wouldn't the curds before putting into the blender be the same as ricotta? And if you let it drain longer, would it be mozzarella? This is so easy! I've been making it out of yogurt but it has to strain for a few days to get really thick. This is fast!

A “way” to use your whey without worrying about the carbs is to use it as a hair rinse. I tried this after making my last batch of yogurt, & it made my hair the softest & fluffiest I think it’s ever been. Washed my hair, then used the whey letting it sit for about 5” then rinsed it out. No funny smell after final rinse out either.
How do you use your whey for your chickens? I would love to be able to give more healthy things to them to eat but I’m not sure how you are using it. Do you soak grains in it or feed it to them like a drink?

I'm wondering if this could be made using Rebel milk, which is made from cream and they replace the lactose with allulose. It has 3 total carbs and 1 net carb (the difference being the allulose). If I tried that, would you still recommend using the HWC?

I cooked it on low pressure for 6 minutes, slow release for 15 minutes, the curds were a very light brown and it had started sticking and turning brown in the bottom of the pan. What did aI do wrong? I used fresh squeezed 🍋 lemons.

Mozzarella goes through a cooking and stretching process (makes it stringy and melty) also rennet makes a better Mozzarella imo

No. You can also use the low fat version. As hard as how much, it depends on how much whey you strain out
