How to make easy Fermented Soybean || Hechiuchang /Axone / Akhuni / Hawaijar

  • This is how I make Hechiauchang ( Fermented Soybean). Fermented Soybean is locally known as Hechiauchang in Zeme and Akhuni or Axone in Nagaland. We Naga people use the Fermented Soybean in a variety of dishes ranging from chutney and pickles , to various popular dishes like smoked pork with Fermented Soybean. Wherever you are if you want you can make it yourself, you don't have to search around in northeast shops 😊.     I want to have akhuni in my city Guwahati but I can't find it anywhere here in my city... I tasted it when I was been to Nagaland..i'am fan of it from that time.

    I absolutely love nattos, but here in Mizoram, there are cases of people dying because of consuming nattos, i don't know if it's directly caused by nattos or not, because our people doesn't investigate cases like that deep. I'm just saying this because it's a bit weird as nattos are considered one of the most nutritious food and a higher intake of fermented soy products, such as miso and natto, is associated with a lower risk of death as said by a Japanese researcher. It's a bit odd as i haven't heard any death cases outside Mizoram that died of eating nattos.

      Everything has a limit... If we eat too much for sure there is side effects in every food mostly fermented foods. But if we consume under limit for sure there are lots of health benefits at the same time.

      Sometimes beans are treated with pesticides and chemical to prolong it's life, which is not fit for humen consumption, in our place also people died consuming such beans, otherwise if it is organic nothing to worry.

      Better store in fridge it last long.

      If you add salt like the Tai Lu style, it ages well and lasts as long as 10+ years without refrigeration

    I tried it and it came exactly came the same way you showed it but the taste is bitter. Is it okay to eat?

      After fermented for 5 days again you should put it in container for some more days.. put the container near flame while cooking and place it under sun 🌞. Or after 5 days of fermented you can directly fry it and start having it. The taste should not be bitter though.
