I believe you're talking about 0:18? In this case it is done by "automating" the volume of the instrument. It is done by right-clicking the volume knob on the instrument and then choosing "Create automation clip" or something like that. Then you just adjust the points on the clip to form a graph representing the volume of the instrument at the given time. Hope this helps!
