You often see influencers just giving a tour of the property and other surface aspects, but you really strive to highlight other factors of a property! Love that you took us into the kitchen!! Pam's energy is just splendid. Her efforts of application in putting the love in what she does comes out completely in the product prepared at the end. Just by looking at her own demonstration I picked up some techniques and very grateful for that. Of course working in such situation demands a lot of skill, time and patience. Pam surely exhibits such good qualities. While working as an Accountant in Jamaica many moons ago I had the privilege of preparing the accounting structure for a Baker who was a former worker of National Bakery and my my that fellow was an art. I took down by hand a few of the recipes of his products but yet to master all of them. Unfortunately, being years in age he passed away many moons ago. Therefore just watching Pam's flow here, is describable of the love put into doing her own. In Jamaica, the hallmark of patty making was for me Tastees. Yet there are others that have come into their own and have indeed raise the bar high high!. I taste Mother's patties, Juicy's, even Golden Crust and others more. I won' t say much as to which is better but to give thumbs up to all those wonderful Bakers such as Pam, putting that sacred love in what they do best. One Love 😊💖.

Blessings to all! We just came back from Negril after 2 weeks and I personally love Norm the Patty Man's patties!!! This trip he didn't have his bike due to the storm and the sea was high but he was walking with them! I'll have to try Pam's the next time we go.
I don't know if you heard of a pastry cutter but that's good to use for when you make them pastry dough and it helps you out a whole lot more it gets up in there real good for for cutting up the shortening and the butter up in your flower along with your water if you have to use it I know a little bit have you tried to empanada
Yes Pam..I'm in the US after living in Sav and Mobay for 16 years. My wife is Jamaican and she thinks mi mad!! I told her I'm going to make patties, coco bread and hardo. She laugh. I failed 2 times but I'm not going to fail again as I'm searching for chef like you. It's not easy to do when ur starting out to make it "pure yardi style" Bless

Ex chef from the Ritz-Carlton first I would like to say yes you work very hard some people underneath me are underpaid the long hours it's not an easy job at all but if your Chef on top you mostly make all the money but it's a hard work
Growing up that what we used, fresh seasonings and the occasional soy sauce and the food did taste good. As for that patty, it really look good and I will take your word for it that it taste good
Hardest part of being a chef is when you're just being introduced to the industry. Took some time to adjust to the hours, the pace, the whole menu and the difference technique.. After all that, without mise en place your work is two or three time harder especially if it is rush hour.. But once it is something you love and possionate about it eliminate the long standing n overworkig and the pace from your mind. So as a Chef I try to stay somewhere i comfortable with so it feel more of fun than working..
it is very difficult, you have to be cleaning your stations as you go for cross contamination, watching everything from temps to safety always on the go, when I am done go home take a shower and I am done until my next shift
Chef work is very stressing at times trust mi I do 6 years in the hotel industry an I give it a break in 2016 recently I start expressing back my skills on my channel
