    1 onion
    3 cloves garlic
    2 bell peppers
    2 cups riced cauliflower (optional)
    1/2 tsp. garlic powder
    1/2 tsp. black pepper
    1 tsp. paprika (or smoked paprika)
    2 tsp. cumin
    1/4 cup chili powder (This is not the same as cayenne pepper! It's actually not very spicy, just flavorful!)
    1 TBL cocoa powder (optional)
    4 cups vegetable broth
    6 cups of beans (I used 2 cups each of black, kidney & pinto)
    800 mL chopped tomatoes
    Optional extra protein add-ins: 1 cup of rehydrated TVP (amzn.to/3RS54WM), 1 package of Beyond Meat ground or 1 pkg. crumbled/ shredded firm tofu.
    Add everything into instant pot (up until tomatoes) and stir well. Add tomatoes and DO NOT stir (tomatoes can ignite the burn warning on IP). Press Bean/Chili button and set timer to 0 mins. Once IP has finished cooking, let the pressure release naturally for 10 minutes, and then release any remaining pressure by turning the nozzle to venting. Taste and adjust seasonings if needed. Enjoy!
    🌱 Chocolate pudding:
    1 pkg. silken tofu (454 grams)
    1/2 cup maple syrup
    Pinch of salt
    Optional: 1/4 tsp. vanilla bean powder (amzn.to/3Ih78Ew)
    - This is your base! To thicken add ONE of the following:
    1/3 cup coconut cream (Refrigerate a can of coconut milk and once cold, scoop the cream off the top. Coconut milk from a can separates cream from water when refrigerated.)
    1/4 cup peanut butter (or PB 2 powder amzn.to/3DWAeGz, or half of each)
    1/4 cup dark chocolate or vegan chocolate chips, melted (about 40-50 grams)
    or
    1/4 cup of chocolate protein powder
    🌱 Black bean dip:
    4 cups black beans (or mix of black, pinto, kidney)
    2 cloves garlic (or sub 1 tsp. garlic powder)
    1-2 small shallots (or sub 1/4 red onion)
    1-2 cups cilantro, start with 1 cup, taste & add more if needed
    1/4 cup jalapeño (reduce or omit if you don't like spicy)
    1/2 tsp. cumin
    1 tsp. chili powder (This is not the same as cayenne pepper! This is a blend of seasonings: amzn.to/3vtFyKC)
    Juice of 1 lime
    Pinch of salt, if desired
    Pulse all ingredients in food processor until desired consistency is reached. Enjoy!

      It has always mystified me how protein is such an over-hyped concern, not just for vegans but everyone, considering that he ideal food for the most critical and intense growth period for humans... breast milk... has the lowest protein content of all mammals and consists of approx. 87% water, 1% protein, 4% fat and 7% carbs (lactose).

    Even broccoli and apples have protein (and fat!). There is such a thing as too much protein. What's more important is how much fiber we're getting. And most people get less than half of the FDA recommended amount, which is itself way less than GI doctors suggest.

      So true! Haha I’ve heard the joke that when vegans get asked where they get their protein they should turn it back and ask where the person gets their fiber. 😂😂

    I love the salad and snack box ideas. So many good ideas! Don’t know why but I have always been afraid of tofu but tried your roasted tofu and loved it. Now I can’t wait to try this chorizo one. After it’s been frozen and thawed, can you refreeze the cooked tofu?

      Aww yay! I’m so happy to hear that! With the tofu… yes I think it would be ok to freeze after. Some people don’t like to refreeze after defrosting, but personally I haven’t had a problem with it. 😊😊

    Maddie Maddie Maddie...u know I love your videos...Don't miss a one BUT you need to get rid of that "nonstick" pan you are using!! It clearly is losing it's coating and potentially getting in your food!! Time for a new one so we can still get all the marvelous videos you do!!

      They’re great!! Definitely be forewarned that they do taste like flax.. I think that was the only thing that surprised me about them. But I’ll be making them again for sure!

      @@LetsEatPlants I should have asked this question when I posted all was so yummy. Can I omit the oatmeal fiber or can I substitute something else. I usually don't eat bread at all but when the protein is this high and it only makes six little baguettes I'm up for it. So let me know if I can substitute something other than the oat fiber

      It’s definitely a bean-heavy chili but it makes a lot of servings so it’s actually quite tasty with that many.. but as mentioned at 4:00 there are other high protein substitutes if you don’t want to use only beans. 😊
