When you lifted the cardboard round off the cake after you flipped it, I thought it might be helpful if you made a little tape handle that you could then use your little knife to lift the card board round straight up. Thanks for sharing your beautiful work and tips.
CMC is a food grade water-soluble gum used for its thickening and stabilizing properties. It gives the royal icing a stretch capability so that when you pipe the strings they don't break.

The corn syrup will give the royal icing elasticity. Use both.
