I want the Kolkata Mutton Biriyani

Biriyani moshla readymade, or make it yourself
Dry roast and grind these items from your kitchen shelf
( 6 green cardamom, 1 black cardamom, 8 cloves, 1 mace, 1 nutmeg, 1/2 tsp whole black pepper, 1 tsp fennel, 1 tbsp whole white pepper, 1 tbsp kababchini, 1 tbsp whole cumin, 2 X 3” cinnamon, 1 star anise )
Fry potato, boiled egg, and the sliced onion ( optionally with a pinch of turmeric )
Line up the marinade items one by one :
Ginger ( 1tsp ) Garlic (1tsp ) Fried Onion ( half the amount ), Rose ( water - 1 tbsp ) , Kewra water ( 1/2 tsp )
Biriyani moshla ( 1tbsp ), coriander ( powder 1 tsp ), cumin (powder 1 tsp ) chilli powder (1tsp)
Turmeric (1 tsp), salt ( to taste ) and oil (1tbsp) add to curd ( 3tbsp) and then beat,
Marinate overnight ( or at least 3 - 4 hrs ) chunks of good boneless meat!
Biriyani mutton without bone!
The purists will straightaway disown!
The bone is a must, says every food blog,
But chewing on a bone makes me feel like a dog!

Everybody loves a biryani

( Next we'll need : 1 cup rice soaked for 30min, a pot of water and a metal strainer to cook it in, 2 bay leaves, 3 green cardamom, 1 tsp cloves, 2 X 2” cinnamon, 1 tbsp fennel, 1 tsp oil - and a pressure cooker to cook the marinated mutton )
In a mix of ghee and oil, add the mutton and stir ( 5 - 7 min )
Pressurise with the potatoes, some salt and water ( 12 min on high, 12 min on simmer )
( In the pan of water add ) Whole gorom moshla, fennel, bay leaf and oil
Add the soaked rice and salt when the water comes to boil
( add the spices in the strainer so that they can be boiled in the water and easily discarded after the rice is cooked )Cook the rice till it is nearly done ( 90% )
In some milk add food colour and saffron
In a pot I will now do my layers
And then set it to slow cook, say your prayers!
Rice, moshla, salt is layer number one
Then mutton, potatoes, prunes and the fried onion
Dash of (biriyani) moshla, mutton gravy, drop of meetha attar,
Sprinkle a bit of rose and kewra water,
Rice again, moshla, salt, melted butter mixed with ghee
Milk with saffron and eggs to complete the assembly
Tightly seal ( with aluminium foil and lid ), cook in indirect heat ( on dum )
Open 30 minutes later, what a feat!!!

the sarangi was so SO BEAUTIFUL !!! listening to it again and again. I am a veg.. but this video looked yum. Have you heard of a dish called Kabuli? its almost done like this just aloo, pyaaj, local bread (from tea stalls) for that chunky feels, lovely spices.

I'm sure it's simplest way to teach such complex recipe. Putting sealed container with rice and mutton layers on boiling water to bake is smart.

I just hate the stressful tense vibes around a biryani where invariably one or two sharp fast cookies will locate and lunge for the good pieces of meat and the nice patient well behaved ones will be left with the rice and bony bits....invariably ( though this sounds sexist ) all the people who've agreed they prefer boneless here in my comments section, are women :D :D :D Let's say I like to have a level playing field around food, so that even the last person who gets to my biryani will get the same stuff as the first person - at least theoretically :D :D :D

@@sawandutta Not any biryani... I personally prefer (almost radicalized about) only 3... Kolkatar Pakki Biryani (better known as Biriyani), Dhaka's Kachchi Biriyani and Tamil Nadu's Dindigul Biryani... Rest of the biryanis are pretty meh in my opinion...

After a long time, Sawan. Was wondering where have u been. Your songs, quite like the food, is a treat by themselves. The biriyani song makes me long Calcutta’s (not spelt like Kolkata) Shiraz’s biriyani. Must be my last meal, if I get hanged. Kudos!!
hahahaha so you're a diehard biryani lover then? Than you so much - I've yet to taste Calcutta's fabled biryanis myself :)
You MUST TRY. It was - and to some extent, still is - HEAVENLY. Try Shiraz, though over time it has been toppled by the upstart, Arsalan. I have been away from the country for last 25 years. But my only attraction to go back to Calcutta has been its food - the traditional one’s that you tout. Of late, the food scene in Calcutta has been dented by the ‘stale meat scam’. But no worries. There’s enuf vegetarian places to enjoy. Looking forward to my trip in March.
