Hey Matt! Love your channel! The white stuff that oozes out of the flesh is called albumin. It's a protein that comes out when the fish is cooked to well. The flesh is giving up it's moisture as it is drying out. It's the same protein that egg whites are made out of.

Love cutting up fresh caught fish and when they are so faffy u can sometimes see an oil slick coming out of the blood. Also when u filet the fish and see the fatty layer between the skin and rhe meat its self. Amazing catch and cook as usual!!! Tight lines boyz!!!
