IG Live Mini Hojicha Basque Cheesecake Bake Along

- Baked up some mini basque cheesecakes tonight on IG live and wanted to share the video here.
Thank you everyone who tuned in tonight and baked along as well.
If you missed the bake along, here’s the ingredient list
All ingredients at room temp.
100g cream cheese, room temp
50g mascarpone, room temp
64g heavy cream, room temp
1 tsp grated Parmesan cheese (optional)
46g egg
24g caster sugar
24g dark brown sugar
Tiny pinch of salt
1/2 tsp vanilla extract
1/2 tsp lemon juice (optional)
5g (3tsp/1tbsp) hojicha powder
Preheat: 200C convection mode
Line pans and portion 75g batter
Bake times:
Place into oven and switch to grill mode and bake at 200C for 6 mins
Turn heat up to 240C and continue to bake with grill mode on for another 2-3 mins until wobbly but with some colour.
Do not go by colour, go by consistency. Otherwise you risk over baking it and it will be too firm.
Let cool in tin for 10-15 mins or until able to hold it shape, remove and rest on wire rack until cooled to room temp.
Enjoy!
Store in fridge for up to 3 days

Thanks so much for sharing! I'm keen to try using mascarpone for the normal basque cheesecake. Would you suggest to also use cream cheese to mascarpone in a 2:1 ratio, as how you have done so for the hojicha recipe?

Thank you very much for sharing this really interesting variation! Maybe I have missed it, but what's the diameter of your molds/rings? And what was the difference in consistency between the 75g and the 100+ g sizes?

In this recipe you’re not using the all purpose flour?
will greek yoghurt make this cake too tangy? :(
It might make it tangier than I would suggest, but you can use a little more cream and less yogurt to balance it out :)
