You took the words right out of my mouth. I cannot stand videos where they have to show us how to chop the onions and the bell peppers and garlic. Just get her done and shut up. I'd like to add that I saw a video where after the meat was done he put it in a food processor for just a few short pulses so that it would be as fine as Taco Bell's meat. I tried that and absolutely loved it.

My family used to have Taco nights were we would use the Old El Paso taco kit. It was wonderful. Ever since moving out, I haven't had the chance to do it again. This video reminded me that I should get some friends together and give it another go.
The Old El Paso seasoning is really good. It tastes better than the seasoned beef in a lot of fast food taco joints, more flavorful.

I used 96/4 and didn’t drain my fat, overall came out good. Added some minced garlic (3-4 cloves of garlic), salt and pepper and about a tablespoon of Taco Bell mild hot sauce, came out pretty good lol.
Imo, i grew up with just “pour and mix and eat” but then once i heard about season up and add in from friends i was like “won’t it make it extra salty?” then noticed it made a difference. Especially once you microwave it. Really comes in handy.

*What I do;* I first dice & fry an onion until sweet (aka browned). Then add your meat & cook until browned (think smash burger seared). And add 2 table spoons of tomato paste & mix in & cook until the tomato paste turns a rusty red color. Then add the spice package & two tea spoons (or more) of better than beef bouillon & a 1/4 cup of water or beef broth if you have it already & stir until thoroughly mixed, and cook until meat is a consistency you're happy with. And to save time putting the tacos together I just use a super chunky salsa, sliced lettuce, & cheese... & sour cream if I haven't forgotten it.

I never break up the ground beef anymore, I cook it all together in a big patty then when it’s grilled on both sides nice and brown I bust it apart, the difference in flavour and juiciness is night and day.
Also, 50/50 ground beef/pork gives it a really unique texture, flavour and color.
Also, deep fry or bake the taco shells at 350 for 6 minutes exactly on the middle rack…they’ll be a very light brown and you’ll have a delicate crunch.
Use a good name brand old cheddar and even maybe blend a smoked white cheddar in with it at about 60/40 depending on how sharp the smoked cheddar is.
    Nice fresh iceberg lettuce.
It’s not super authentic tacos but it’s what Taco Bell should be.
They’re my favourite food and I’ve been making them ritually for 25 years.
