According to Peter Lu, they did it using a set of 5 tiles that captured the geometry. This is no less amazing than the compass and straightedge construction, considering they anticipated Penrose tiles by about 500 years. www.peterlu.org/content/decagonal-and-quasicrystalline-tilings-medieval-islamic-architecture
Actually, the tiles are complete mathematically too: you find all kinds of symmetries possible in a group in these (13). I think the fact that they had constraints (they couldn't draw people or living beings in Mosques and palaces), boosted their creativity so they came up with these and with complex calligraphy too. (It was the Moors and not Muslims, this art is still alive in Morroco with Zellij).
I tried creating some Islamic patterns digitally on my Ipad using Procreate but it takes more time than just on paper. Only advantage is copying to tessellate and shutting off layers/lowering opacity to not get lost in all the construction lines.

Forgive me for being ignorant, but I have to say that all this hard work could have been achieved in illustrator in about 10 minutes. I understand art concepts and the philosophy of hard work to become a great artist, but this is just waste of time. It accomplishes nothing. I don't even think it's correct, some stars are crooked.
You are right that it could have been achieved in Illustrator. However, I do appreciated his pantience and respect his hard work. Besides, he's talented and his work is amazing! This video helps me to understand how islamic pattern works.
Nae Dolor you are right. The reason some stars are crooked is because he did not use the correct method. There is a whole science behind Islamic geometry that is why it's more than just drawing shapes. It does look aesthetic though.
Also being able to draw this stuff by hand through the traditional methods is useful in design for stuff that doesn’t involve a computer - I’m a jeweller and I’m currently working on some metal pieces using patterns like this. I’ve been learning to draw these patterns and how to generate new ones with the same techniques, so I can then cut or join pieces along those lines. This video was cool, I hadn’t seen some of these patterns done before and wouldn’t have known by sight how they were made.
