Years ago, I made my owh mayo with pretty much the same recipe. Instead of using dry mustard, I used Dijon Mustard. Avocado oil was pretty much unheard of then. Looks great, I'll give it a try.

Avocado oil is not a seed oil.. It's made from the fruit itself and not the seed. Seed oils cause inflammation and are One of the reasons for the health crisis in the United States and starting around the world now... Vegetable oil, canola oil, sunflower oil, safflower oil, corn oil... They are all inflammatory

Duke's is not sold here in California so I've bought through Amazon which sells for $10 for a 30 oz jar. So I'm definitely going to try your recipe. I'm from the South, but I never heard of Duke's until about 3 years ago living here in California. My mother used Miracle Whip as well. ALL soybean by-products (meal and oil) are GMOs. "Natural flavors" could include MSG.

I watched this again; I love dukes and use it! But I want to make my own; I just bought an immersion blender.! So does the lemon juice have to be fresh? Or can I use the green bottle. I have everything else but a lemon.
Watch the full video for all instructions. Very important. The lemon juice doesn't have to be fresh, but the fresh lemon juice has all the enzymes and healthy benefits intact. It was still work without it. 😁
I made mayo for the first time today. It was horrible, I screwed it up first, then I used olive oil tasted horrible. Threw it out. So you said you can use bacon fat, going to try that since avacado oil is so expensive. Thanks for sharing

If your mayonnaise fails to solidify, you can always turn the existing ingredients into a cake, After all, you already have the egg and I’ll just add the rest of the ingredients along with some baking powder
Howdy - a couple of questions here: How long will this stay good? I've always made mayo using yolks and whipping in hot oil, so am wondering if you pasteurize your eggs first (140* water for 3.5-ish minutes)? Could you omit the water for a thicker, richer texture? THANKS once again, Southern Man!
Howdy 👋🏻 it's good for a least a week, but I've kept it for 2 and it was fine. I don't pasteurize at all, but I'm sure you can. You can definitely leave out the water. You're very welcome! Hope that helps! 😁
Quick note!! My immersion blender will not fit into a regular mason jar, only a wide mouth jar. Also, the plastic white mason jar lids are very hand over using bands and lids.

Sure, you can! I use avocado because it's a neutral flavor which is more conducive to the Duke's flavor. The olive oil works fine. I would say 10 to 14 days, but I have had some longer

Love the recipe, i did use butter though only because I'm doing bbbe right now. I will try it with avocado oil later. I've tried the Chosen and Primal kitchen brand avocado mayo and don't like them at all. They have awful after taste to me. So thank you. A keto Heinz 57 sauce would be great too!

Yes you can! Avocado is just more of a neutral flavor where you will taste a little bit of olive flavor. I actually make it with olive oil almost all the time

Salmonella is only on the outside of the eggs, so if you get farm fresh eggs or store bought, just wash them. I recommend if you're new to making mayonnaise, you look at my Duke 2.0 version. That's what I have switched to..

I saw a couple of things the other day with that label on it. It's a shame then we don't have regulations like a lot of countries do to try to protect the health of their citizens. @@deejaygee2521you can use water in case you like a thinner consistency for using in sauces, etc. It takes some practice to make it with an immersion blender, but it's just an emulsion. You can do it with a blender or even a whisk if you prefer.
@@brucew.5177 no, the apple cider vinegar gives it the tang that you need. The immersion blender is a little bit of a learning curve. I'm doing another video on how to do it in the blender also. I tried this recipe and I was disappointed. It did not thicken and had a very strong vinegar taste. The consistency was like salad dressing. Not sure why water would be added to the ingredients.

Just add a few drops of oil while the eggs and seasonings are processing and then just add a little stream at a time until it fully emulsifies and then a steady stream to finish it. I'm a big vinegar fan. Even using the same amount of filtered instead of raw ACV makes it milder too. Hope that helps 😀
Lol bacon grease is healthy? That is in the same category as soybean and canola. I grew up on Hellman’s in the north. When i moved south i found out most people frowned on Hellman’s and said quite plainly “we use dukes down here”. Lol They sell Hellman’s so i buy Hellman’s. My mom made her own mayo. Tastes so different than store bought.
Bacon grease is 100% healthy. It isn't even close to soybean and canola. Seed oils are the among the most inflammatory foods you can put in your body. This recipe uses avocado oil, so not sure where the bacon grease reference comes in, but bacon fat is not inflammatory. I would be glad to discuss further and even do a video about this subject.
@@southernketo how when pork itself is not healthy. Okay put it this way for many of us the pig is an unclean animal and so is his bacon grease. You can eat what you want but I stand by my statement. So many other choice oils out there.

Because it's delicious! 😂 I made a healthy version that isn't made with gmo soybean oil. That's what a lot of my content is about; making healthy versions of unhealthy foods. Those types of oils are super inflammatory! Mine is a healthy, delicious alternative that gives you the great taste without the not great side effects.

Sure, you can! I use avocado because it's a neutral flavor which is more conducive to the Duke's flavor. The olive oil works fine. I would say 10 to 14 days, but I have had some longer

Love the recipe, i did use butter though only because I'm doing bbbe right now. I will try it with avocado oil later. I've tried the Chosen and Primal kitchen brand avocado mayo and don't like them at all. They have awful after taste to me. So thank you. A keto Heinz 57 sauce would be great too!

Yes you can! Avocado is just more of a neutral flavor where you will taste a little bit of olive flavor. I actually make it with olive oil almost all the time

Would there be any concerns about salmonella?
Salmonella is only on the outside of the eggs, so if you get farm fresh eggs or store bought, just wash them. I recommend if you're new to making mayonnaise, you look at my Duke 2.0 version. That's what I have switched to..
@@southernketo Thank you! I have my own hens so I am good. I did make the mayo that you cook the egg slowly in microwave up to I think it is 165F. It is a pain to do that. Glad I don't have to worry.

I saw a couple of things the other day with that label on it. It's a shame then we don't have regulations like a lot of countries do to try to protect the health of their citizens. But, when you're being funded by big food and big Pharma, I guess we have to expect that. Keep people fat, sick, and medicated...🤬

Video shows 1 c avocado oil but recipe states 3/4 c. Which is correct?
I use 1 cup, but I'm really good with the immersion blender. 3/4 cup makes it easier to emulsify. Thanks for watching and good catch! 😉

Most commercial food products that are made with oil, use soy or cottonseed oil.
And they are SO inflammatory

@@deejaygee2521you can use water in case you like a thinner consistency for using in sauces, etc. It takes some practice to make it with an immersion blender, but it's just an emulsion. You can do it with a blender or even a whisk if you prefer.
My family only eats Blue Plate. I don't eat it anymore.

@@brucew.5177 no, the apple cider vinegar gives it the tang that you need. The immersion blender is a little bit of a learning curve. I'm doing another video on how to do it in the blender also. I personally like soybean oil taste over avacado. I will stick to my Kraft Mayo. Tastes the best to me.
Neither one really has a taste and soybean oil is super inflammatory. Seed oils are one of the biggest problems in the health of the world today.
I tried this recipe and I was disappointed. It did not thicken and had a very strong vinegar taste. The consistency was like salad dressing. Not sure why water would be added to the ingredients.

Just add a few drops of oil while the eggs and seasonings are processing and then just add a little stream at a time until it fully emulsifies and then a steady stream to finish it. I'm a big vinegar fan. Even using the same amount of filtered instead of raw ACV makes it milder too. Hope that helps 😀

Lol bacon grease is healthy? That is in the same category as soybean and canola. I grew up on Hellman’s in the north. When i moved south i found out most people frowned on Hellman’s and said quite plainly “we use dukes down here”. Lol They sell Hellman’s so i buy Hellman’s. My mom made her own mayo. Tastes so different than store bought.
Bacon grease is 100% healthy. It isn't even close to soybean and canola. Seed oils are the among the most inflammatory foods you can put in your body. This recipe uses avocado oil, so not sure where the bacon grease reference comes in, but bacon fat is not inflammatory. I would be glad to discuss further and even do a video about this subject.
@@southernketo how when pork itself is not healthy. Okay put it this way for many of us the pig is an unclean animal and so is his bacon grease. You can eat what you want but I stand by my statement. So many other choice oils out there.
@@elianaisraelnc7904 my favorite is avocado oil 🥑 to make my mayonnaise or to cook things when you don't want to change the flavor. Olive and coconut are great also, but they do change the flavor of whatever you're cooking.

Dukes is made with gmo soybean oil. Why would you want to replicate that garbage?
Because it's delicious! 😂 I made a healthy version that isn't made with gmo soybean oil. That's what a lot of my content is about; making healthy versions of unhealthy foods. Those types of oils are super inflammatory! Mine is a healthy, delicious alternative that gives you the great taste without the not great side effects.
Now, how many of the ingredients you’ve used contain GMO’s? So much for healthy…
None of them contain GMOs
Duke's is terrible. I tried it one time and once was enough.
