At 2:56 you can see just how much you're twisting the rope rappelling on two rings, the pulley would prevent that and keep your rope from twisting like that.
I make new loops, knots are fine but I prefer stitched loops. I really am not sure if you can do a ground install, for me I always access with srt and then switch to a top anchor. Thanks for your kind words!
