We put in a 72' x 32' greenhouse. Our freeze dryer has been a godsend. I am truly enjoying it and it's worth every penny. Freeze dried food is more nutritious than dehydrated foods and the taste when it's reconstituted is like fresh- not so, with dehydrated foods. I still dehydrate some things, but if the freezer dryer is empty- I use it first :)
Do you make videos? I would have thought Harvest Right would have made more than a 38 second video. Do you FD them raw, blanched? Eggplant, zucchini, tomatoes, kale, etc.?
Dehydrating, fermenting, brining, storing dried beans and rice in mylar bags with oxygen absorbers will last many years (some other items can be stored like this too) hard tack, pemmican and honey store for many years too. I ended up buying one of these with the stimulus money, but I'll still use these other methods....some can't be beat like canning pickles yummm :)
Your "How To Set Up Your Freeze Dryer" has comments turned off, so I'm commenting here. In that video, you tell the viewer to remove the door gasket, but you never tell them to reinstall it. Time for a remake?

Not to be rude but if you use the right materials and know-how canning isn't too hard especially Tomatoes you basically just boil drain and can
They last about 4-5 years in our house
But they cam last longer

Is this the video you are referencing? If so, we do say to replace the gasket after rinsing and drying. ua-cam.com/video/olFYh7wWX5M/v-deo.html
I am a gamer not a garden owner.
