A few reasons why potatoes were used in cakes: 1. They were very cheap and easy to get, especially for farmers etc. For many people back then, desserts were a luxury and very rare, but by mixing potatoes into a cake, it became bigger without having to spend significantly more on it 2. They do also have a lot of starch in them and since they were much easier to get than for example cornstarch, it was very convenient 3. They have a very neutral taste and a creamy consistency when mashed, so it was a perfect addition for a cake batter 4. Potatoes are really good for making the cake moist and soft So, all in all, they were mostly used because they were easy to get and very cheap and they actually brought a lot of other advantages with them, regarding the baking.
I was pulling out my stand mixer to make an oreo pie when I got this notification. I was like "oh maybe I'll just follow along and make whatever you're making" ....then you said Tomato Soup Cake and I noped out of that idea.
About 30 years ago, my mom asked me to find a recipe for a chocolate cake made with potato. I researched and finally found a great offering (no skins!!) that she said tasted like her grandmother's cake. Such a great memory.💕🤗😍

Just an aside, check out the jean parè cook book called cookies. I've never had a fail from her, and if your oven heats evenly, and you cook for the lower amount of time suggested, you can achieve crisp and chewy all in one. At least in the oatmeal chocolate chip one that is a fave in my house. 😊 No special instructions at all. Easy peasy.

My older sister always asks for a chocolate potato cake (some kind of recipe that was handed down in my family from who knows how long ago)- literally the only one in my family who actively enjoys it. My mom hates making it because it's an involved process with grating the chocolate and prepping the potatoes but my sister loves it.
This is really fun to me because we actually a lot of sweet dishes traditionally made from potato dough in Austria. Two of the best are Marillenknödel (dumplings with apricot and sweetened bread crumbs) and Mohnnudeln (thick noodles with Poppy and sugar on top)
Tomato soup cake is really common in Romania, especially among older generations. And bread is traditionally made from potatoes in some parts. These are pretty neutral tasting, the weirdest ingredient I saw in dessert recipes is chicken breast (Turkish cookbook).
I Miss Campbell's tomato soup. Never knew at the time that it actually contained wheat until I was diagnosed with celiac disease and I was never able to have it again. There is nothing out there on the market that can replace the taste of Campbell's tomato soup. 😭

I love tomato soup cake! My grandma used to make them as muffins with raisins and no icing for us and that’s the way I prefer them. I do believe there aren’t any cloves in her recipe so it’s a little less spicy and more carrot cakey.
Sometimes I find it so amusing that North Americans put icing on all cakes! Some cakes are just better without any frosting :P Btw - the reason your butter wasn't blending in with your sugar is because it was way too cold. You need to have softened room temperature butter to effectively cream it with sugar. And wiping down the sides of your loaf tin (where you had so much batter stuck) will help prevent scraggly bits around your cake. Having unclean edges can also sometimes "block" the rise of your cake and make it rise in a lopsided/ uneven manner. Most importantly, those untidy bits burn easily and make your entire oven smell smoky and burnt, often ruining the flavour of your cake! So definitely clean the sides and edges of your loaf tin/ any baking pan before popping it in the oven!
